  • Place seasonings in a large zip-top bag, add the oil and lime zest and juice. Shake the bag to make sure everything is combined.
  • Add the steak, peppers, and onion to the bag. Seal the bag and shake to make sure everything is coated. Refrigerate for at least 1 hour, or overnight.
  • Preheat oven to 375 degrees F.
  • Remove the meat and vegetables from the bag with tongs. Arrange in a single layer on a baking sheet and discard the marinade.
  • Roast the fajita mixture in the oven for 20-25 minutes until an instant-read thermometer inserted horizontally into center of meat registers 125 degrees F (for medium-rare).
  • Serve with your favorite keto tortillas and top with sour cream, hot sauce, chopped cilantro, and extra lime juice, if desired.
