Cheesy Bacon Ranch Brussels Sprouts

This easy to make low carb side dish is a combination of tender roasted brussels sprouts, crispy bacon, melted cheese, and everyone's favorite, ranch dressing. It is a crowd-pleaser!

Ingredients
  

  • 1 pound Brussels sprouts trimmed and halved
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 8 slices bacon diced
  • 2 ounces cheddar cheese shredded
  • homemade ranch dressing (store-bought)

Instructions
 

  • Preheat oven to 425 degrees F.
  • in a large bowl, toss brussels sprouts with olive oil and garlic.
  • Place the sprouts cut side down on a baking sheet and season with salt and pepper.
  • Scatter bacon on the pan.
  • Bake the sprouts until they are tender and deeply golden on the edges, about 20 to 25 minutes.
  • Remove from the oven and sprinkle with the cheddar cheese, return to the oven and cook for an additional 5 minutes or until the cheese is melted and slightly bubbly.
  • Drizzle with ranch dressing and serve warm. *See Notes
