    I grew up hating brussels sprouts.
     
    I mean literally despising them!
     
    My Mom would put them in a pot to boil, the whole house would start to stink, and I would run to my room praying that I would magically be transported to some other dimension before dinner so I wouldn't have to eat the nasty little green things!
     
    Fast forward to my adult years, like my reallllllly late adult years. 
     
    I finally learned how to cook the little buggers.
     
    I learned that roasting them, or braising them, or sauteing them was the way to go.
     
    Who knew? 
     
    I sure as heck didn't!
     
    I just knew the plain old way Mom did them YUCK!
    But then came the task of convincing my kids to eat them.
     
    Ya, that was a fun one.
     
    My son wasn't too hard. He was a football player. He became a human vacuum cleaner when it came to eating.
     
    He used to say, "I like food" ?
     
    The girl?
     
    Oh ya, that was a different story.
     
    She didn't get the nickname Miss Picky Pants for nuthin'!
     
    But one year I made these Brussels Sprouts with Bacon and Shallots and WALA it was like I cast some sort of magical spell that opened the heavens and changed everything!
     
    Now, if I don't make brussels sprouts for the holidays? She pouts.
     
    Like full-on hands on hips not gonna eat pout.
     
    At least some things don't change.

    • olive oil
    • pink salt
    • cracked black pepper
    • garlic
    • bacon
    • cheddar cheese

    HOW TO MAKE CHEESY BACON RANCH BRUSSELS SPROUTS

    STEP 1

    Preheat oven to 425 degrees F.

    STEP 2

    in a large bowl, toss brussels sprouts with olive oil and garlic.

    STEP 3

    Place the sprouts cut side down on a baking sheet and season with salt and pepper.

    STEP 4

    Scatter bacon on the pan.

    STEP 5

    Bake the sprouts until they are tender and deeply golden on the edges, about 20 to 25 minutes.

    STEP 6

    Remove from the oven and sprinkle with the cheddar cheese, return to the oven and cook for an additional 5 minutes or until the cheese is melted and slightly bubbly. Drizzle with ranch dressing and serve warm.

    Can I make these Cheesy Bacon Ranch Brussels Sprouts ahead of time?

    You can prep everything and get it ready but it is best to make these brussels sprouts right before you are ready to eat. They are the best warm from the oven.

    Can I use a different cheese for these Cheesy Bacon Ranch Brussels Sprouts?

    Absolutely! I use cheddar because pretty much everyone in our family loves cheddar, but you could use a mild cheese like Monterey jack or mozzarella, or something a little zingy like pepper jack. A smoked cheese would be good as well!

    How should I store the leftover Cheesy Bacon Ranch Brussels Sprouts?

    Store your leftovers in an airtight container in the refrigerator for up to 3 days. I like to reheat them on a baking sheet lined with parchment paper or lightly oiled with olive or avocado oil. You can also reheat them on a plate in the microwave for 30 seconds to 1 minute, but the texture will be soggier than if they are reheated in the oven.

    For those of you, that are where I was back then, totally turned off by the smell, I get it!
     
    But, roasting brussels sprouts saves you from that fate. 
     
    Boiling them just releases that smell into the air and keeps it going, and going, and going.
     
    But roasting, especially with bacon and garlic, make it a pleasant experience for everyone.
     
    We literally sit and wait for the timer to ding when this is in the oven, it smells that good!
     
    So that should tell you how much the family enjoys this recipe, and how much it doesn't stink up the house.
     
    This recipe would also work really well with other typically "stinky" veg.
     
    After going low carb I discovered that many of the low carb substitute veggies were on the ummm aromatic side.
     
    Things like cauliflower, broccoli, brussels sprouts, and cabbage are all on the "nice" list when it comes to carbs, but not so much when it comes to your nose.
     
    Not fair, I know.
     
    So trying to come up with ways to please your palate AND your nose can be difficult.
     
    This recipe does both!
     
    So, if you are on the fence about brussels sprouts, you could always give one of those other veggies a try.
     
    But I really think you should go for it, I know you will be pleasantly surprised.
     
    If Miss Picky Pants loves them, I know you will too!
