Loaded Cauliflower Casserole

This Loaded Cauliflower Casserole recipe is Keto friendly, and gluten-free, with tender cauliflower, bacon, and cheese. It’s a family favorite alternative to loaded baked potatoes.

Ingredients
  

  • 1 large head cauliflower cut into florets
  • pink salt
  • 1 tablespoon unsalted butter
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 8 ounces sharp cheddar cheese shredded
  • 6 slices bacon cooked and chopped
  • 4 green onions chopped
  • cracked black pepper
  • 1 teaspoon organic onion powder
  • fresh chives chopped for garnish

Instructions
 

  • Preheat oven to 400 degrees F.
  • In a large pot of salted boiling water, cook cauliflower until tender, 5 minutes.
  • Drain well.
  • In a large saucepot, over medium heat, melt butter. Add the garlic and cook for 1 minute.
  • Add heavy cream and bring to a low simmer. Stir in 1 1/2 cups of the cheese and the onion powder, whisking until combined and thickened. Season with salt and pepper to taste.
  • Add drained cauliflower and all but 2 tablespoons of the bacon to the pot and stir until combined. Top with remaining cheese and bacon.
  • Bake for 30 minutes until the cheese is nice and bubbly.
  • Allow the casserole to cool slightly before serving.
