Ingredients
  

For the salad

  • 1 pound cooked chicken breast shredded or cubed
  • 1 large cucumber peeled, seeded, and diced
  • 2 roma tomatoes seeded and diced
  • 1/2 small red onion diced
  • 3 tablespoons fresh flat-leaf parsley finely chopped
  • 1 tablespoon fresh dill chopped
  • 3 tablespoons fresh lemon juice (1 lemon)
  • 3/4 cup keto mayonnaise
  • 1/2 cup feta cheese crumbles
  • pink salt
  • cracked black pepper

For serving

Instructions
 

  • In a large bowl, combine the first 10 ingredients. Taste and add salt and pepper as needed.
  • Serve chicken salad in lettuce wraps or low carb tortillas or in low carb buns.
