I am going to talk about this amazing Greek Chicken Salad but, first, let me rant a bit!
I know y'all have listened to me complain talk about the hot weather that we have been having, and I know that "hot" can be a subjective term, but the forecast was just changed from 90 to 106!
OK, that is HOT, I don't care where you are!!
We have cooler weather coming, the high 80s, and that is going to feel like a cold front is coming through!
We Washingtonians just don't deal with hot weather well.at.all!
I gotta give Kevin some credit because, with our recent move, the grill is on the back deck with zero shade anywhere. He has been standing out in this weather grilling and smoking!

Now, I haven't been completely unproductive.
I made Kevin some Blueberry BBQ Sauce sauce to satisfy his barbeque-loving taste buds, we have a bowl of Mediterranian Cauliflower Salad in the fridge, and (since I am kinda diggin' the whole Mediterranian dealio) I made this Greek Chicken Salad.
Am I allowed to say "HOLY YUM BATMAN" about my own recipe? Cuz ummm HOLLAAA this may just be my new fave chicken salad!
I love my Lemon Herb Chicken Salad and Loaded Chicken Salad, and I especially love my Buffalo Chopped Chicken Salad!
But this chicken salad, is light, bright, and great in a lettuce wrap, on a low carb bun, or just out of the bowl.
Kevin even took it for lunch two days in a row!!

You need just a handful of tasty ingredients to make this Greek Chicken Salad recipe.
- cooked chicken
- cucumber
- tomato
- red onion
- fresh parsley
- fresh dill
- mayo
- pink salt
- cracked black pepper
- lemon juice
- feta cheese

Hint: Try to chop all of the veggies and chicken close to the same size. It makes it easier to get a bit of everything in every bite.
Substitutions

- Chicken - instead of boneless skinless chicken breasts you can use boneless skinless chicken thighs. It is cheaper and you can up your fat intake if you need it.
- Vegetables - this is where I say to use whatever veggies you enjoy. I love Greek flavor profiles so I grabbed what follows that line, but you are welcome to do what makes you happy.
- Mayonnaise - if you are a hard no when it comes to mayo try sour cream, Greek yogurt, or a combo of the two.
📖Variations
Once you have the basics of this recipe down you can always change it up to match whatever flavor profiles you enjoy.
- Italian - add one can of drained and chopped artichoke hearts in place of the cucumber. Omit the fresh dill and add a tablespoon of my Italian Seasoning Blend to the mayo before adding it to the salad. Swap parmesan curls or shreds for the feta cheese.
- Mexican - substitute green onion for the red onion and add a tablespoon of my Mexican Seasoning blend to the mayo before adding it to the salad. Swap the parsley out for cilantro and lime for the lemon.

The only equipment you really need to make this Greek Chicken Salad is a good Chef's knife, measuring cups and spoons, a large mixing bowl, and a spoon.
Storage
Store the Greek Chicken Salad in an airtight container in the refrigerator for up to 4 days.
I have not tried freezing this chicken salad.

Oh, absolutely! I made this when I was just getting my husband to enjoy olives, he wasn't a fan at first, so I left them out. I have since started adding about 1/2 cup of chopped pitted Kalamata olives and he loves it! Just add your salt at the end after you taste the salad since the olives can add salt.
Yes, you sure can. I would just double the veggies and add a cup of chopped pitted kalamata olives!
If you store it in an airtight container it should last up to 4 days in your fridge.

Ingredients
For the salad
- 1 pound cooked chicken breast shredded or cubed
- 1 large cucumber peeled, seeded, and diced
- 2 roma tomatoes seeded and diced
- 1/2 small red onion diced
- 3 tablespoons fresh flat-leaf parsley finely chopped
- 1 tablespoon fresh dill chopped
- 3 tablespoons fresh lemon juice (1 lemon)
- 3/4 cup keto mayonnaise
- 1/2 cup feta cheese crumbles
- pink salt
- cracked black pepper
For serving
- lettuce leaves
- low carb tortillas
- low carb buns
Instructions
- In a large bowl, combine the first 10 ingredients. Taste and add salt and pepper as needed.
- Serve chicken salad in lettuce wraps or low carb tortillas or in low carb buns.
