Keto Cajun Dirty Rice

This Keto Cajun Dirty Rice has all the flavors of the traditional version, with ground beef, peppers, onions, and Cajun seasoning. It is so delicious you can serve it as the main course or as a tasty side dish.

Ingredients
  

  • 2 tablespoons bacon grease (or butter)
  • 1/2 large onion (1 cup) chopped
  • 4 stalks celery chopped
  • 1 large bell pepper chopped
  • 4 cloves garlic minced
  • 1 pound ground beef *See Notes
  • 2 to 3 tablespoons Cajun seasoning blend to taste
  • 2 teaspoons dried thyme leaves
  • 1 teaspoon pink salt or to taste
  • 1 can diced tomatoes
  • 1 head cauliflower (about 4 cups) riced
  • 1/2 cup beef bone broth (homemade or store-bought)
  • 1/4 cup fresh flat-leaf parsley chopped

Instructions
 

  • Heat a large Dutch over medium heat.
  • Add the bacon grease (or butter), chopped onions, celery, bell peppers, and minced garlic to the pot.
  • Sauté for 5 minutes, until the onions are soft.
  • Stir in the ground beef, breaking it up with a meat chopper or wooden spoon.
  • Add the Cajun seasoning (If you are sensitive to spice, use only 2 tablespoons of the Cajun seasoning), thyme, and salt.
  • Brown the meat for about 5 minutes.
  • Once the meat is no longer pink, stir in tomatoes, riced cauliflower, and beef bone broth.
  • Mix well and reduce the heat to medium-low.
  • Allow the mixture to simmer for 5 minutes.
  • Then remove the pot from the heat and leave it to steam for another 5 minutes.
  • Taste and adjust seasonings as needed (can add more Cajun seasoning and/or salt), and stir in the parsley.

Notes

  • You can also try this with ground chicken, pork sausage, or vegan “ground beef”.
