Is Cajun Dirty Rice Keto?
Traditional dirty rice has things like ground beef, ground pork, andouille sausage, chicken livers, or gizzards along with the holy trinity of onions, peppers, and celery. There are also herbs and seasonings.
The "dirty" part comes from the color the rice would turn from the meat and spices.
All of the meat and vegetables are fine for the low carb lifestyle but of course, rice is a big no-no.
But, that is OK, substituting cauliflower rice for regular rice is an easy swap and that little step saves you 42 carbs per cup of rice!
As far as the rest of the ingredients, I kept it really simple because I know we like an easy recipe here right? But, feel free to add things that you like.
Do you enjoy some spicy sausage? Add some sliced andouille.
Do you dig some chicken livers? Go for it!
Do a blend of ground beef and ground sausage.
Or go straight ground chicken if you want a lighter dish.
Also, I used this as a side dish so if I was going for a main dish and wanted to keep the hubster happy I would definitely bump up the meat content.
That man is a straight carnivore!

- bacon grease (or butter)
- onion
- celery
- bell pepper
- garlic
- ground beef
- Cajun seasoning
- dried thyme
- pink salt
- diced tomatoes
- cauliflower
- beef bone broth
- fresh parsley
HOW TO MAKE KETO CAJUN DIRTY RICE

STEP 1
Set a large Dutch over medium heat. Add the bacon grease (or butter), chopped onions, celery, bell peppers, and minced garlic to the pot. Sauté for 5 minutes, until the onions are soft.
STEP 2
Stir in the ground beef, breaking it up with a meat chopper or wooden spoon.
Add the Cajun seasoning (If you are sensitive to spice, use only 2 tablespoons of the Cajun seasoning), thyme, and salt.
STEP 3
Brown the meat for about 5 minutes.
STEP 4
Once the meat is no longer pink, stir in tomatoes, riced cauliflower, and beef bone broth.
STEP 5
Mix well and reduce the heat to medium-low. Allow the mixture to simmer for 5 minutes.
STEP 6
Then remove the pot from the heat and leave it to steam for another 5 minutes.
STEP 7
Taste and adjust seasonings as needed (can add more Cajun seasoning and/or salt), and stir in the parsley.

Can I use a different ground meat in place of the ground beef in this Keto Cajun Dirty Rice?
Yes, you can use ground pork, sausage, or chicken. Also, feel free to toss in some sliced andouille and chicken livers if that floats your boat!
Is this dirty rice recipe safe for diabetics?
Absolutely! The regular rice in traditional dirty rice could be an issue for a diabetic diet but with the use of cauliflower rice in this keto Cajun dirty rice it is diabetes-friendly for sure!
How should I store the leftover Keto Cajun Dirty Rice?
You can store the leftovers in an airtight container in the refrigerator for up to 5 days or you can freeze them for up to 3 months.

What spurred me of to make a keto version of dirty rice was my husband going on about how much he loved Popeyes dirty rice.
Since we live in Western Washington we really don't get many opportunities to eat "real" Cajun food.
NOLA is on our bucket list for that very reason. I want some real down-and-dirty Cajun food! But, until then, we have to deal with what we got, and sadly Popeye's is one of the things we deal with.
Well, as soon as he said he liked the dirty rice and wanted me to make it at home you know I told myself I could do it better! But my challenge was to provide a dish that was keto AND made this carbaholic rice-loving man happy.
Well, my friends, I am happy to announce that I did just that.
He not only ate his entire bowl, but he also went back for more AND ate leftovers.
Y'all, this man never eats leftovers!!

Ingredients
