Homemade Keto Peanut Butter

  • Using a good food processor, or a high-powered blender, process the peanuts to a sandy consistency.
  • Add 1 tablespoon of the oil. *If using a food processor please see the notes below.
  • Continue to process/blend, (be patient it will take some time) until the peanut butter reaches the desired consistency.
  • Add sweetener, to taste.
  • Drizzle in the other tablespoon of oi (or water) to make it slightly thinner (if wanted) and to add fat.
  • Place peanut butter into pint jars or airtight containers.
  • Store the peanut butter at room temperature where it will keep for at least 2 weeks, or store it in the refrigerator, where it keeps for up to 3 months.

Notes

If using a food processor vs a high-speed blender (like I do), the food processor will need to run for around 10 minutes to achieve a creamy peanut butter texture.
