Keto Tomato Bisque with Bacon

This easy to make keto tomato bisque is a creamy and delicious gluten-free soup with bacon and basil. It will quickly become a family favorite!

  • Cook bacon in a large soup pot over medium-high heat until it begins to crisp. Remove half of the bacon and drain on paper towels.
  • Reduce heat to medium; add garlic and cook for a minute, then add the tomato paste and stir to combine. Cook for 2 minutes.
  • Stir in crushed tomatoes, chicken bone broth, onion powder, salt, and pepper to taste.
  • Bring to a boil, reduce heat to low, and simmer for 20 minutes, stirring occasionally
  • Stir in the sherry and cream, simmer for 10 minutes, stirring frequently.
  • Add half of the basil and remove soup from heat. Blend with an immersion blender (or transfer to a blender and blend in small batches) until smooth.
  • Place bisque in serving bowls; top with a drizzle of cream (optional), the remaining bacon, and basil

Notes

Use a good dry drinking sherry, not cooking sherry.
Can use chicken bone broth in place of sherry if you prefer. The resulting soup will not be as rich, but it will reduce the net carbs per serving by approx 2.
