For the waffles

Instructions
 

  • Preheat your mini waffle maker.
  • Combine all of the waffle ingredients in a blender until smooth.
  • Let the batter rest for a few minutes to thicken up.
  • Meanwhile, in a small bowl, combine the cinnamon sugar ingredients. Set aside.
  • Scoop a little less than a 1/4 cup batter into the waffle maker, spread andwith a spatula or a spoon, and cover.
  • Cook according to manufacturer instructions (usually about 5 minutes), or until steam is no longer coming out the sides.
  • Carefully remove the waffle from the iron (they are fragile while they are hot) and place the waffle on a wire cooling rack.
  • Coat the waffle in the cinnamon sugar mixture.
  • Repeat with the remaining batter.
  • Make the cream cheese glaze by combining the cream cheese, powdered sweetener, heavy cream, and vamilla in a small bowl until smooth.
  • Place the churro waffles on a plate, drizzle with the cream cheese glaze and warm keto maple syrup if using.
