Combine all the waffle ingredients in a blender until smooth.
Scoop a scant (just a little less than) 1/4 cup batter into the waffle maker, spread, and cover.
Remove the waffle from the iron and coat the waffle in the cinnamon sugar mixture.

For the waffles
- 3 tbsp Wholesome Yum Coconut Flour
- 3 large eggs
- 2 ounces cream cheese room temperature
- 2 tbsp unsalted butter room temperature
- 1/4 cup heavy cream
- 1 tbsp Besti Monk fruit and Allulose Sweetener
- 1/2 tsp gluten-free baking powder
- 1/4 tsp xanthan gum
- 1/2 tsp real vanilla extract
For the cinnamon sugar
- 1/4 cup Besti Brown Sweetener
- 1/2 cup Besti Monk fruit and Allulose Sweetener
- 2 tsp ground cinnamon
For the cream cheese glaze
- 1/4 cup whipped cream cheese
- 1/4 cup Besti Monk Fruit and Allulose Powdered Sweetener
- 2 tbsp heavy cream
- 1/4 tsp real vanilla extract
For serving
- Wholesome Yum Keto Maple Syrup optional
Instructions
- Preheat your mini waffle maker.
- Combine all of the waffle ingredients in a blender until smooth.
- Let the batter rest for a few minutes to thicken up.
- Meanwhile, in a small bowl, combine the cinnamon sugar ingredients. Set aside.
- Scoop a little less than a 1/4 cup batter into the waffle maker, spread andwith a spatula or a spoon, and cover.
- Cook according to manufacturer instructions (usually about 5 minutes), or until steam is no longer coming out the sides.
- Carefully remove the waffle from the iron (they are fragile while they are hot) and place the waffle on a wire cooling rack.
- Coat the waffle in the cinnamon sugar mixture.
- Repeat with the remaining batter.
- Make the cream cheese glaze by combining the cream cheese, powdered sweetener, heavy cream, and vamilla in a small bowl until smooth.
- Place the churro waffles on a plate, drizzle with the cream cheese glaze and warm keto maple syrup if using.
