Keto Instant Pot Corned Beef and Cabbage

Ingredients
  

  • 1 3-pound corned beef brisket, plus pickling spice packet or 1 1/2 tablespoons pickling spice
  • 2 cup beef bone broth
  • 3 cloves garlic smashed
  • 1 pound small turnips look for turnips the size of baby potatoes or cut larger turnips into smaller pieces, peeled and pierce with a fork or pairing knife
  • 3 large carrots cut into 2-inch pieces (can omit for strict keto)
  • 1 head Savoy or green cabbage cut into 2-inch wedges
  • Pink sea salt
  • Freshly ground pepper
  • Fresh parsley leaves chopped
  • Whole grain mustard

Instructions
 

  • Rinse brisket with cold water and thoroughly pat dry.
  • Place the trivet into the Instant Pot. Add the garlic, and pickling spice into a 6-qt Instant Pot. Place the brisket on the trivet. Add the beef bone broth.
  • Select manual setting; adjust the pressure to high, and set time for 85 minutes. When finished cooking, quick-release the pressure.
  • Remove brisket from the Instant Pot and wrap in foil to keep warm.
  • Add the turnips and carrots, and top with cabbage. Season with salt and pepper, to taste.
  • Select manual setting; adjust the pressure to high, and set time for 8 minutes. When finished cooking, quick-release the pressure.
  • Thinly slice corned beef against the grain and serve with the turnips, carrots, and cabbage, garnished with mustard and parsley if desired.
