- 1 pound small turnips look for turnips the size of baby potatoes or cut larger turnips into smaller pieces, peeled and pierce with a fork or pairing knife
- 3 large carrots cut into 2-inch pieces (can omit for strict keto)
- 1 head Savoy or green cabbage cut into 2-inch wedges
- pink salt to taste
- Freshly ground pepper to taste
- Fresh parsley leaves chopped
- Whole grain mustard
Instructions
- Rinse brisket with cold water and thoroughly pat dry.
- Place the trivet into the Instant Pot. Add the garlic, and pickling spice into a 6-qt Instant Pot. Place the brisket on the trivet. Add the beef bone broth.
- Select manual setting; adjust the pressure to high, and set time for 85 minutes. When finished cooking, quick-release the pressure.
- Remove brisket from the Instant Pot and wrap in foil to keep warm.
- Add the turnips and carrots, and top with cabbage. Season with salt and pepper, to taste.
- Select manual setting; adjust the pressure to high, and set time for 8 minutes. When finished cooking, quick-release the pressure.
- Thinly slice corned beef against the grain and serve with the turnips, carrots, and cabbage, garnished with mustard and parsley if desired.
