Ingredients
  

  • 4 center cut pork loin chops
  • 1 tablespoon whole grain mustard
  • 4 tablespoons olive oil divided
  • Pink salt
  • Fresh cracked black pepper
  • 1/4 cup Dijon mustard
  • 3 tablespoons honey
  • 2 teaspoons soy sauce
  • 1 clove garlic minced
  • 1 tablespoon fresh rosemary minced

Instructions
 

  • Preheat the oven to 375 degrees.
  • Heat 2 tablespoons of olive oil in a large cast iron skillet, over medium-high heat.
  • In a small bowl, combine the whole grain mustard, 1 tablespoon of olive oil, salt, and pepper. Pat pork chops dry with a paper towel. Coat both side of the pork chops with the mustard mixture.
  • In another small bowl, stir together the dijon mustard, honey, olive oil, soy sauce, garlic, and rosemary. Set aside.
  • Sear the pork chops for 2 to 3 minutes. Turn over and pour the honey mustard mixture over the top of each pork chop.
  • Place skillet in the oven and bake for 20 to 25 minutes.
  • Spoon any sauce that remains in the skillet over the top of the pork chops.
