Low Carb Old-Fashioned Turkey Croquettes

Ingredients
  

  • 1 medium onion rough chopped
  • 3 stalks celery rough chopped
  • 2 large carrots rough chopped
  • 6 tbsp unsalted butter
  • 1 3/4 cup King Arthur Keto Wheat Flour divided
  • 3/4 cup heavy cream
  • 3/4 cup chicken bone broth
  • 1 tbsp fresh marjoram chopped (can use 1 teaspoon dried)
  • 1 tbsp fresh sage chopped (can use 1 teaspoon dried)
  • 1 tbsp fresh thyme chopped (can use 1 teaspoon dried)
  • 1/2 tsp paprika
  • Pink salt
  • Fresh cracked black pepper
  • Fresh ground nutmeg
  • 4 cups cooked turkey chopped
  • 2 eggs lightly beaten
  • 2 cups ground pork rinds
  • Avocado Oil for frying

Instructions
 

  • Place the onion, celery, and carrots in a food processor and pulse until minced.
  • In a large pot, melt butter. Add the minced veggies and saute until softened, about 5 minutes. Whisk in 3/4 cups keto flour and add the heavy cream and chicken bone broth. Cook and stir until mixture thickens and bubbles, and continue cooking for 1 minute more.
  • Add parsley, sage, thyme, paprika, salt, pepper, and nutmeg and combine well.
  • Allow to cool then place in refrigerator for at least one hour (can refrigerate overnight).
  • Place the cooked turkey into the food processor and pulse until ground.
  • In a large mixing bowl, combine the sauce with the ground turkey. Place back into the fridge to chill thoroughly.
  • Create a work station with a shallow bowl of the remaining keto flour, the beaten egg, and a shallow bowl with the ground pork rinds.
  • With wet hands, shape 1/4 cup of the mixture into patties, cones, or balls, then roll in flour, egg wash, and ground pork rinds.
  • Heat 1 inch of avocado oil in a skillet over medium heat. Working in batches, cook croquettes in a single layer until golden brown, about 2 minutes per side. Transfer to paper towels to drain.
  • Serve immediately with cranberry sauce and/or turkey gravy.
