Garlic Parmesan Baked Zucchini and Tomatoes

Ingredients
  

  • 1 pound zucchini cut into half-moons
  • 1 pint grape tomatoes cut in half
  • 4 garlic cloves minced
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • pink salt to taste
  • Fresh cracked black pepper to taste
  • 1/2 cup Parmesan Cheese shredded
  • 1/4 cup fresh Italian parsley or basil chopped

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a large bowl, toss the zucchini, tomatoes, and garlic with the olive oil. Add the Italian seasoning, salt, pepper, and Parmesan cheese, and toss again.
  • Pour the mixture into a 9x13 casserole dish, or spread on a baking sheet, and bake uncovered for 30 to 35 minutes.
  • Remove from the oven, garnish with more Parmesan cheese and the parsley or basil, and serve.

Notes

To avoid the dish being watery you can salt the zucchini in a collander and allow it to crain for about thirty minutes, Pat the zucchini dry and then continue with the recipe.
