Grilled Chicken Fajita Skewers

Ingredients
  

  • 1/2 cup cilantro roughly chopped
  • 1/3 cup fresh squeezed lime juice
  • 1/3 cup olive oil
  • 4 cloves garlic
  • 1 tbsp Besti Brown Sweetener
  • 1 tsp pink salt
  • 1 1/2 tsp ground cumin
  • 3/4 tsp ancho chile powder
  • 2 lb chicken breasts cut into 1-inch cubes
  • 1 large red onion cut into 1-1/2 inch cubes, in 3 layer segments
  • 1 large green bell pepper stemmed, seeded, and cut into 1/2-inch pieces
  • 1 large red bell pepper stemmed, seeded, and cut into 1-1/2 inch pieces

Instructions
 

  • Place cilantro, lime juice, olive oil, garlic, brown sugar, salt, cumin, and ancho chile powder in a blender, and blend until smooth.
  • Place chicken cubes in a large, zip-top plastic bag.
  • Pour the mixture over the chicken cubes, seal the bag, and marinate in the refrigerator for 1-24 hours.
  • Remove the chicken from the marinade, discarding leftover liquid.
  • Thread the chicken onto skewers, alternating with pepper and onion squares.
  • When ready to grill, prepare the grill by lightly oiling the grates and set to medium-high heat.
  • Grill the chicken, turning often, so each side has grill marks, for about 10-15 minutes or until the chicken reaches 160 internal temperature .*Cook times will vary depending on set and ambient temperatures.
  • Allow the chicken to rest for about 5 minutes before serving.
