Growing up in Southern California, my love for Mexican and Mexican-inspired cuisine runs deep. The vibrant flavors, the spices, and the variety of dishes always make my taste buds dance. My husband, however, hasn't always shared my enthusiasm for these flavors. So, I'm always on the lookout for creative and tasty ways to win him over. And that's where these Grilled Chicken Fajita Skewers come in!
Grilling is a surefire way to hook my husband. The smoky, charred flavor it imparts can elevate just about any dish, and these fajita skewers are no exception. The combination of marinated chicken and grilled vegetables creates a keto-friendly recipe that's not only healthy but also absolutely mouthwatering.
I wasn't prepared for just how much my granddaughter and my photographer's daughter would love this recipe. They devoured the chicken, and while they weren't huge fans of the veggies (kids, right?), their enthusiasm told me I was onto something special. When a recipe wins over the little ones, you know it's a keeper!
These Grilled Chicken Fajita Skewers are versatile too. You can serve them on their own for a simple, delicious meal, or wrap them in low-carb tortillas with cheese, sour cream, salsa, or any of your favorite taco toppings. The possibilities are endless, and I promise this will become a summertime favorite for your entire family.
Give these skewers a try at your next barbecue or family dinner. They’re easy to make, packed with flavor, and sure to win over even the pickiest eaters. Enjoy the taste of summer and the vibrant flavors of Mexico, all in one delicious, keto-friendly dish!

🔪Grilled Chicken Fajita Skewers Instructions
This is a basic breakdown of the steps involved in making Grilled Chicken Fajita Skewers. You will find the full directions in the recipe card at the bottom of the post.
Place cilantro, lime juice, olive oil, garlic, brown sugar, salt, cumin, and ancho chili powder in a blender, and blend until smooth.
Place chicken cubes in a large, zip-top plastic bag.
Pour the mixture over the chicken cubes, seal the bag, and marinate in the refrigerator for 1-6 hours.
Thread the chicken onto skewers, alternating with pepper and onion squares.
Helpful Hint: 💡 If using wooden skewers, soak them in water for at least 30 minutes before threading the chicken and vegetables. This will prevent the skewers from burning on the grill and help keep everything juicy and flavorful.

Storage
If you have any leftover Grilled Chicken Fajita Skewers, let them cool to room temperature. Remove the chicken, peppers, and onions from the skewers and place them in an airtight container. Store in the refrigerator for up to 3-4 days.
To reheat, you can either use the microwave or reheat them in a skillet over medium heat until warmed through. For longer storage, you can also freeze the leftovers. Place the chicken and vegetables in a freezer-safe container or zip-top bag, and store in the freezer for up to 2 months. Thaw in the refrigerator overnight before reheating. Enjoy your leftovers as a quick meal or repurpose them into a delicious salad or wrap!
💭Top tip
For even cooking and the best flavor, try to cut the chicken, peppers, and onions into uniform sizes. This ensures that everything cooks evenly and absorbs the marinade's delicious flavors. Additionally, don't overcrowd the skewers; leaving a little space between the pieces allows the heat to circulate and cook the chicken thoroughly.
