Ingredients
  

  • 1 4- to 4 1/2-lb boneless pork loin roast, trimmed
  • 1/2 tsp pink salt plus more to taste
  • 1/4 tsp fresh cracked black pepper plus more to taste
  • 3 cloves garlic finely chopped
  • 2 tbsp fresh thyme finely chopped
  • 1/4 cup Keto Honey Mustard Sauce
  • 1 lb thinly sliced bacon
  • 1 tbsp Wholesome Yum keto honey
  • 1 tbsp cider vinegar

Instructions
 

  • Preheat oven to 350 degrees F
  • Pat the pork dry, salt and pepper it, and transfer to a roasting pan.
  • In a small bowl, combine garlic, thyme, and the Keto Honey Mustard Sauce.
  • Brush the sauce all over the pork. 
  • Lay bacon slices crosswise over the loin, overlapping slightly, and tuck the ends of the bacon underneath the roast.
  • Roast pork for 45 minutes. Stir together the keto honey and vinegar until combined. Brush vinegar mixture over bacon slices and continue to roast pork until thermometer registers 140 F, about 15 minutes more.
  • Meanwhile, in a small bowl, stir together the keto honey and vinegar. 
  • Brush the vinegar mixture over the roast and continue to cook until a thermometer registers 140 F, about 15 minutes more.
  • Remove from oven, tent with foil, and let stand in pan for 15 minutes.
