  • Preheat your mini waffle maker.
  • Combine all of the waffle ingredients in a blender until smooth.
  • Let the batter rest for a few minutes to thicken up.
  • Scoop a little less than a 1/4 cup batter into the waffle maker, spread with a spatula or a spoon, and cover.
  • Cook according to manufacturer instructions (usually about 4 to 5 minutes), or until steam is no longer coming out the sides.
  • Carefully remove the waffle from the iron (they are fragile while they are hot) and place the waffle on a wire cooling rack.
  • Repeat with the remaining batter.
  • Make the cream cheese glaze by combining the cream cheese, powdered sweetener, heavy cream, and vanilla in a small bowl until smooth.
  • Place the red velvet waffles on a plate, and drizzle with the cream cheese glaze and warm keto maple syrup if using.
