  • In a medium saucepot, over medium-high heat, place the cherries, water, lemon juice, sweetener, and salt.
  • Bring to a boil.
  • Once boiling, whisk in the zanthan gum and then reduce to a simmer.
  • Stir frequently until cherries are very soft and sauce is thick (about 10-15 minutes).
  • Turn off the heat, and stir in the vanilla extract.
  • If using sour cherries, taste and add more sweetener if needed.
