Ingredients
  

  • 1 4- to 4 1/2-lb boneless pork loin roast, trimmed
  • Pink sea salt
  • Fresh cracked black pepper
  • 3 garlic cloves finely chopped
  • 2 tablespoons fresh thyme finely chopped
  • 1/4 cup Keto Honey Mustard Sauce
  • 1 pound bacon
  • 1 tablespoon keto honey
  • 1 tablespoon cider vinegar

Instructions
 

  • Preheat oven to 350 degrees F
  • Pat pork dry, salt and pepper it, and transfer to a roasting pan. Stir together garlic, thyme, and the Keto Honey Mustard Sauce in a small bowl and rub all over the pork. Lay bacon slices crosswise over the loin, overlapping slightly, and tuck the ends of the bacon underneath the loin.
  • Roast pork for 45 minutes. Stir together the keto honey and vinegar until combined. Brush vinegar mixture over bacon slices and continue to roast pork until thermometer registers 140 F, about 15 minutes more.
  • Remove from oven and let stand in pan 15 minutes.
