I don't know about you, but any time I make a roast of any kind it kinda feels "fancy" to me.
Maybe that is a throwback to my childhood.
The only time my Mom made a roast was when we had company.

- Boneless pork loin roast
- Pink sea salt
- Fresh cracked black pepper
- Fresh Thyme
- Keto Honey Mustard Sauce
- Keto honey
- Apple Cider Vinegar
HOW TO MAKE HONEY MUSTARD PORK LOIN (KETO & SUGAR-FREE)
Preheat oven to 350 degrees F
Pat pork dry, salt and pepper it, and transfer to a roasting pan. Stir together garlic, thyme, and the Keto Honey Mustard Sauce in a small bowl and rub all over the pork.
Lay bacon slices crosswise over the loin, overlapping slightly, and tuck the ends of the bacon underneath the loin.
Roast pork for 45 minutes.
Stir together the keto honey and vinegar until combined. Brush vinegar mixture over bacon slices and continue to roast pork until thermometer registers 140 F, about 15 minutes more.
Remove from oven and let stand in pan 15 minutes.

Can I use a pork tenderloin instead of the loin?
I have only made this with the loin but yes, I am sure you could use tenderloin in it's place. Just be aware that the cook time will be shorter so monitor the temperature and pull it out when it reaches 140 degrees F. Tent with foil and allow the tenderloin to rest for 10 to 15 minutes.
I thought pork needed to be cooked to 165 degrees F.
Yes, in the past the USDA guideline was that pork should be cooked to an internal temperature of 160 degrees F. That was due to the possible presence of trichinosis, a microscopic parasite. However, trichinosis has been eradicated in our domestic pork so you can now safely consume pork cooked to lower temperatures.

Store the leftovers in an airtight container in the refrigerator for up to 4 days. You can reheat the leftovers in the oven or microwave.

- 1 4- to 4 1/2-lb boneless pork loin roast, trimmed
- Pink sea salt
- Fresh cracked black pepper
- 3 garlic cloves finely chopped
- 2 tablespoons fresh thyme finely chopped
- 1/4 cup Keto Honey Mustard Sauce
- 1 pound bacon
- 1 tablespoon keto honey
- 1 tablespoon cider vinegar
- Preheat oven to 350 degrees F
