Ingredients
  

  • 1 tablespoon olive oil
  • 2 stalks celery chopped
  • 2 garlic cloves minced
  • 2 cups organic pure pumpkin puree or store-bought
  • 1 chipotle chile in adobo chopped, plus 2 teaspoons adobo sauce
  • 1 tablespoon onion powder
  • 2 tablespoons carrot powder
  • 6 cups chicken bone broth
  • Fresh cracked black pepper
  • Pink salt
  • 1 cup heavy whipping cream
  • Cilantro chopped (optional)

Instructions
 

  • In a heavy-bottomed soup pot or Dutch oven, over medium-high heat, add the olive oil. When it is hot add the celery and chopped chipotle pepper, then season with a pinch of salt. Saute until just tender, about 5 minutes
  • Add the garlic and saute for another minute, then add the pumpkin puree, onion powder, and carrot powder. Stir to combine well.
  • Add the chicken bone broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer 20 minutes.
  • Turn off the heat and using an immersion blender (or a regular blender in batches), carefully puree the soup until smooth.
  • Season with salt and pepper to taste.
  • In a small mixing bowl, whisk the heavy whipping cream and adobo sauce together. Stir into the soup.
  • Ladle into soup bowls and top with chopped cilantro.
