    • 1 tbsp onion powder
    • 6 cups chicken bone broth or store bought
    • fresh cracked black pepper
    • 1 cup heavy cream use coconut milk for dairy-free
    • Fresh cilantro chopped (optional)

    • In a heavy-bottomed soup pot or Dutch oven, over medium-high heat, add the olive oil.
    • When it is hot add the celery, carrot, and chopped chipotle pepper, then season with a pinch of salt.
    • Sauté until just tender, about 5 minutes
    • Add the garlic and saute for another minute, then add the pumpkin puree and onion powder.
    • Stir to combine well.
    • Add the chicken bone broth and bring to a boil.
    • Reduce the heat to low, cover the pot, and simmer 20 minutes.
    • Turn off the heat and using an immersion blender (or a regular blender in batches), carefully puree the soup until smooth.
    • Season with salt and pepper to taste.
    • In a small mixing bowl, whisk the heavy whipping cream and adobo sauce together. Stir into the soup.
    • Ladle into soup bowls and top with a drizzle of heavy cream and chopped cilantro.
