Ingredients
  

  • 2 tablespoons olive oil
  • 2 stalks celery diced
  • 2 carrots peeled and diced (can omit for strict keto)
  • 1/4 teaspoon garlic powder
  • 1 tablespoon onion powder
  • Pink salt
  • Freshly cracked black pepper
  • 1/4 cup dry white wine like a Pinot Grigio (optional)
  • 8 cups chicken bone broth I use Kettle and Fire
  • 4 sprigs of fresh thyme
  • 2 bay leaves
  • 1 1/2 to 2 pounds boneless skinless chicken breasts
  • 1 12 ounce package Palmini low carb rice, rinsed
  • Zest of 2 lemons
  • 1/4 cup lemon juice
  • 1/4 cup fresh tarragon leaves chopped

Instructions
 

  • In a large soup pot or Dutch oven, heat the oil over medium heat. Add the celery and carrots, and saute until just tender, 5 to 8 minutes. Stir in the garlic and onion powder, salt, and pepper to taste.
  • Deglaze with the wine, and then add in the stock, bay leaves, and thyme. Add in the chicken, bring to a simmer and cook until the chicken is cooked through - about 15 to 20 minutes. Remove the chicken and let it cool a bit. Keep the broth on a low simmer.
  • Add the rinsed Palmini rice and continue cooking until the rice is hot.
  • Check the seasoning of the broth and add salt or pepper if needed and remove the thyme and bay leaves.
  • Shred the cooled chicken and return to the pot along with the pasta, lemon zest, juice, and tarragon leaves.
