Keto Cajun Tuna Cakes (Gluten-Free)

Ingredients
  

For the remoulade

  • 1 cup keto mayonnaise
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh flat-leaf parsley chopped
  • 1 tbsp lemon zest
  • 2 tsp lemon juice
  • 1 clove garlic

For the tuna cakes

  • 3 7-ounce cans solid white albacore tuna drained
  • 1 tbsp Dijon mustard
  • 1 tbsp Cajun seasoning blend
  • 1 large lemon zested and half juiced
  • 3 tbsp fresh chives chopped
  • 3 tbsp fresh flat-leaf parsley chopped
  • 1 cup ground pork rinds (or keto breadcrumbs) *See Notes
  • 2 large eggs
  • 1/4 cup olive or avocado oil

Instructions
 

For the remoulade

  • In a small bowl combine the ingredients for the remoulade. Place the bowl in the refrigerator while you make the tuna cakes.

For the tuna cakes

  • Combine all of the ingredients for the tuna cakes, except the oil, in a large bowl.
  • Shape into 8 patties and place them on a parchment paper-lined tray or baking sheet.
  • Heat 2 tablespoons of the oil in a large skillet, over medium heat.
  • When the oil begins to ripple place 4 of the tuna cakes in the skillet.
  • Cook the tuna cakes for 3 to 4 minutes per side, or until golden brown.
  • Remove the tuna cakes from the skillet and place them on a paper towel-lined plate.
  • Serve warm with remoulade, tartar sauce, or fresh lemon juice.

Notes

For keto bread crumbs - toast 4 slices of keto bread and allow the toast to cool. Tear the toasted keto bread into pieces and place in a food processor. Pulse until you have breadcrumbs.
