Instructions
For the remoulade

For the tuna cakes
- Combine all of the ingredients for the tuna cakes, except the oil, in a large bowl.

- Heat 2 tablespoons of the oil in a large skillet, over medium heat.
- When the oil begins to ripple place 4 of the tuna cakes in the skillet.
- Cook the tuna cakes for 3 to 4 minutes per side, or until golden brown.
- Remove the tuna cakes from the skillet and place them on a paper towel-lined plate.
- Serve warm with remoulade, tartar sauce, or fresh lemon juice.
