I love this recipe!
Why?
Well, for one it makes Kevin happy.
He is a true, and I mean true, beef lover. He will suffer through a few nights of chicken, pork, or seafood, but if I don't give him beef (and often) you would think that he was a grizzly bear being starved before hibernation!
Don't get me wrong, I love beef. But since my gastric bypass surgery, I just can't eat a whole steak by myself.
Unless it is a filet.
Oh yes my friends, I can be an expensive pet.
Usually, I work with flank steak, or maybe a chuck roast.
Things that are inexpensive and that we can share.
Plus you can prepare them in so many different ways. Grill, broiler, stovetop, slow cooker. Marinades and sauces make the possibilities endless. They can also easily be saved for a nice leftover lunch as well.
Occasionally I will make my carnivore verrrrrrrrrrrrry happy and buy his favorite cut, which is a nice marbled thick-cut ribeye.
Oh boy, you want to see a gleam in his eye and a pep in his step?
Yup, that will do it!
But for this, I really wanted to concentrate on meals that the G-baby would like and be quick and easy for a family to make.
Plus I just wanted to have some fun.
Kids love to play with their food, heck I love to play with my food! So why not take one of America's favorite dishes, the humble burger, and make it fun for the whole family?
I absolutely love kabobs of all kinds, so when trying to figure out what I wanted to make burgers and kabobs were bouncing around in my head. They kind of collided and BAM these little babies appeared.
Kevin was even excited about them!
We both love the flavor of grilled veggies, it adds a nice smoky flavor while it develops the sugars to make them fabulous with the nice juicy meatballs.
I knew that if people had some finicky eaters when it came to veggies that grilling would be the way to go. Plus if your kids are older, they can have some fun assembling the kabobs with you to go on the grill.
I paired the kabobs with my Deluxe sauce to give them a little zip, but if you just want a more traditional sauce just replace the Sriracha with regular ketchup.

Deluxe Cheeseburger Kabobs
This cheeseburger kabob recipe is fun for the whole family. Low-carb and keto friendly, this easy to make recipe is sure to be a hit! Who doesn't love tasty food on a stick?

ingredients:
- 8 wooden or metal skewers
- 2 pounds Certified Angus Beef® brand ground beef
- Kosher Salt
- Fresh cracked black pepper
- 16 cherry tomatoes
- 1 red onion
- 16 dill pickle slices
- 4 American cheese slices
- Deluxe sauce
instructions:
How to cook Deluxe Cheeseburger Kabobs
- If using wooden skewers, soak them in water for 20 minutes
- Roll the ground beef into 16 golf ball sized balls. Season with salt and pepper.
- Quarter the red onions and the cheese slices..
- Start the kabob by feeding on some of the red onion, followed by a tomato, pickle slice, and meatball. Repeat, ending with more red onion to cap it off.
- Heat your grill to medium-high.
- Grill the kabobs, turning several times until the veggies begin to brown, and the meatballs are cooked through. Approx 10 minutes, or until cooked through. (time depends on the size of the meatballs)
- Place a square of sliced cheese on each meatball for the last minute or two of cooking time.
- Serve with the Deluxe sauce.
