In a large skillet, add butter over medium heat. Add mushrooms and shallots and saute over medium/high heat, stirring occasionally - about 3 minutes.

Add the thyme, salt, and pepper, and sauté for a few more minutes or until shallots are translucent and mushrooms are very soft.

Brush the tops of the flatbread with the olive oil so the top is coated.

Then add 1/4 of the mushroom mixture to the top of each flatbread, spreading evenly over the top. Sprinkle 2-ounces of goat cheese crumbles to each flatbread.
