Easy Slow Cooker Shredded Chicken – No more need for those over priced rotisserie chickens. This will give you twice the chicken for the same amount of money, or LESS!
The other day I gave Kevin the shopping list, and on it was a rotisserie chicken.
He grumbled, and I got the lecture about the fact that they might make things easier, but they ended up costing way more in the long run.
I will admit, I have been one of those rotisserie chicken people for a long, longggggggggggg time.
I mean, it is just so simple. And who doesn’t want and/or need to simplify their life?
Hellooooo who wants to roast a whole chicken before they make chicken enchiladas?
Not me, that is for sure! Oh, I have tried searing and then baking the chicken breasts. Again, too much work in my book.
I am sure that at this point you are probably asking yourself why, if I am going to complain about cooking things, am I a food blogger.
Well, it isn’t that I don’t like to cook. I love to cook! I just hate recipes that seem to have a kabillion steps, and currently despise any recipe that requires me to turn any kind of heating element on in my kitchen.
Ummm ya, 85 in my house…..cooking es no bueno!
That was what led me to using my slow cooker.
I honestly don’t know why I haven’t done it before now. I do my pulled pork that way, if we aren’t smoking it, and I know that anytime you cook chicken in the slow cooker it pretty much gets fall off the bone, if there are any, tender.
But it took Kevin pointing out that the rotisserie chickens seem to be getting higher and higher priced, and smaller and smaller in size.
Pretty much you are paying $8.00 for a rotisserie pigeon!
When I pull the meat off the bones, which by the way is OhhEmmGeeee YUCKY, I am lucky if I get 3 cups worth!
Price that out…..$2.66 per cup of chicken. Not so great of a deal really.
This way you get 8 cups of shredded chicken.
I got my boneless, skinless, chicken breasts on sale for $1.78 a pound. So I ended up paying a little over $7.00. and that breaks down into $.89 a cup!
I never thought there was that much of a difference!
Damn, I hate it when I have to admit Kevin is right!
So, that’s what made me decide to do this post.
Not the prettiest pictures, but I wanted to spread my discovery to y’all.
And you will need this little nugget of info so you can make the awesome recipe I will be posting this Sunday!

Just an FYI – If you are planning to freeze your chicken, save the liquid from the slow cooker, then add a 2 or 3 tablespoons per cup of chicken to the bag you freeze it in. That keeps it from drying out.
I freeze mine in 2 cup portions, because most of my recipes call for 2 cups of shredded chicken.
Now get that shredded chicken made so you are ready to go for Sunday’s recipe!!
