I know I have been talking about how much I enjoy Kevin being the "King of his domain" (grilling) because it gives me a nice break from cooking. All I have to do it decide on what side we might like, which lately has been grilled corn on the cob or baked potato on the grill so he gets to do everything!
But if I am being honest with you, now it is just me and you right?
If I am going to be 100% honest with you,
I kind of miss grilling.
You see, I am a gas girl.
OK charcoalers you can stop with the face.
It is not that I prefer gas to charcoal, it is just that I never learned how to use charcoal.
My Daddy was a gas griller, my ex was a gas griller, I had a gas grill....get the picture?
Then Kevin comes along and looks at me like I have lost my mind the first time I put a steak on my gas grill. "Well Mr, if you want me to cook on charcoal buy me a grill", was my response.
He had a charcoal grill at his place, but our kids live there so they use it and, well being the faaaaaaabulous parents that we are, we didn't want to take it away from them.
So you can imagine how excited Kevin was when we moved into the new place and found that the previous tenants had left a grill/smoker behind.
Oh, he was all kinds of happy!
But then the funniest thing (or annoying depending on how you look at it) happened.
He became possessive with the dang grill.
It became his job, or territory, or domain, depending on how you look at it.
And like I said, I like not having the demand of cooking every night.
But I think my pride is starting to get involved. Here I am a food blogger, I talk about the food I make and how to make it, but I have to hover over Kevin and take notes because I am not "cooking" the food. I can do this, it is not rocket science right?
Alright, you have convinced me. Next time we grill, which is tonight, I will be rolling up my sleeves and stepping into his domain. I sure hope he slept well today!!
Grilled Chicken with White BBQ Sauce

Ingredients
- 8 chicken thighs
- 1 cup mayonnaise (use this brand for keto version)
- 3/4 cup apple cider vinegar
- 2 tablespoons sugar (substitute erythritol for keto version)
- 1 teaspoon dry mustard powder
- zest from 1 lemon
- Fresh cracked black pepper
- Redmond's real salt
Instructions
- In a bowl, combine the ingredients for the BBQ sauce. Cover and refrigerate for an hour to allow the flavors to meld
- Preheat the grill to medium-high.
- Season the chicken thighs with salt and pepper.
- Grill chicken over medium-high heat for approx 5 to 7 minutes per side depending
- Serve with leftover sauce.
