    🍌 Nostalgia in Every Bite: Keto Banana Cake with Cream Cheese Icing 🍰

    When I was a teenager, summers were all about trips to the beach and indulgent little squares of banana cake from the corner market. Those delightful treats, made by Nemo's, were incredibly moist and topped with rich cream cheese frosting. I bought them nearly every day, savoring each bite while soaking up the sun. As I grew older, those cakes remained a sweet memory, though I occasionally treated myself to them.

    Moving to Washington brought new adventures but also a sad realization—I couldn’t find those beloved banana cakes anywhere. Then I went keto, which I initially thought meant bananas were off-limits due to their high carb content. But I discovered that you could incorporate just enough banana to get that irresistible flavor without the high carb count.

    I decided it was time to recreate those memory-inducing cakes with a low-carb twist. This Keto Banana Cake is a perfect blend of nostalgia and keto-friendly goodness. I chose to make it a layer cake to suit holidays and celebrations, given that I don't eat sweets as often now. When I finally served it, everyone loved it, which made me incredibly happy.     🔪Keto Banana Cake Instructions

    This is a basic breakdown of the steps involved in making Keto Banana Cake. You will find the full directions in the recipe card at the bottom of the post.

    Helpful Hint: 💡 For an extra moist cake, make sure your bananas are very ripe. The riper the bananas, the more natural sweetness and banana flavor they will add to your cake.

    1. Store the Cake: Place the fully assembled Keto Banana Cake in an airtight container Refrigerate for up to 5 days to keep it fresh.
    2. Storing Individual Slices: If you prefer, you can slice the cake and store individual pieces in airtight containers. This makes it easier to grab a slice when you want one.

    💭Top tip

    When toasting the walnuts, keep a close eye on them as they can go from perfectly toasted to burnt very quickly. Stir them occasionally and remove them from the oven as soon as they start to turn golden and become fragrant. This will give your cake an added layer of crunch and flavor.

    FAQ about Keto Banana Cake

    What can I use instead of sour cream?

    If you don’t have sour cream, you can substitute it with full-fat Greek yogurt or even mascarpone cheese. Both will provide the creamy texture and slight tang needed for the cake.

    How can I tell when the cake is done baking?

    The cake is done when a toothpick inserted into the center comes out clean or with just a few crumbs. The top should be golden brown, and the edges should start to pull away from the sides of the pan.

    Can I add nuts or other mix-ins to the cake batter?

    Absolutely! Chopped walnuts or pecans make a great addition to this banana cake. Fold in about 1/2 cup of nuts or your favorite mix-ins just before pouring the batter into the pans.

    Ingredients
      

    For the Cake

    • 1/2 cup unsalted butter softened
    • 1/4 cup coconut oil melted
    • 2 1/4 cup Besti Monk fruit and Allulose Sweetener
    • 2 tsp lemon juice
    • 1 1/2 cup sour cream
    • 3 eggs
    • 2 tsp real vanilla extract
    • 1/2 tsp pink salt
    • 2 tsp ground cinnamon
    • 2 tsp baking soda
    • 3 cups King Arthur's keto wheat flour
    • 3 very ripe bananas well mashed (1 1/2 cups)

    For the Cream Cheese Icing

    • 1/2 cup unsalted butter softened
    • 8 ounces cream cheese softened
    • 1 tsp real vanilla extract
    • 1/4 tsp pink salt
    • 3 cups Besti Monk Fruit and Allulose Powdered Sweetener

    For the Garnish

    • 1/2 cup walnuts
    • 1 tbsp avocado oil
    • 1/2 tsp pink salt

    Instructions
     

    To make the Cake

    • Preheat oven to 350 degrees F.
    • Grease and flour 2 8" cake pans.
    • Using a hand mixer or your stand mixer, combine the butter, oil, and sweetener. Mix thoroughly.
    • Next, add eggs one at a time and mix just until combined.
    • Add vanilla, salt, lemon juice, and sour cream. Mix well. Scrape the edges and bottom of the bowl to make sure everything is well combined.
    • Add baking soda and flour. Mix just until combined.
    • Then, fold in the bananas just until combined.
    • Pour the cake batter evenly into the prepared pans (do not fill more than 2/3 full).
    • Bake at 350 degrees for 25-35 minutes or until a toothpick comes out clean.
    • Remove from the oven and place on a cooling rack.

    To make the Cream Cheese Icing

    • In a medium-sized mixing bowl, add the softened butter and softened cream cheese. Beat for 2 minutes until smooth.
    • Add the vanilla and mix until blended.
    • Then, add powdered sweetener and a pinch of salt and beat until smooth.

    To make the Garnish

    • Line a rimmed baking sheet with parchment paper or foil for easy cleanup.
    • Toss walnuts in oil and salt if desired. Arrange in a single layer on the prepared baking sheet.
    • Toast until browned and fragrant, stirring occasionally, about 7 to 10 minutes.
    • Remove from oven and roughly chop (optional) when cool.

    To assemble the Cake

    • Once the cake is cool run a knife around the edge of the cake pans and carefully tip the cakes out onto a cutting board or a clean counter.
    • Place one layer on a cake stand.
    • With a sharp knife remove the top of the layer if it is not flat.
    • Carefully spread about 1/3 of the icing on the cake.
    • Top with the remaining layer.
    • Frost the cake with the remaining icing.
    • Top with the walnuts.

      Hello, I love using this flour and looking forward to making the cake but I don’t see how the lemon juice is used. Did I miss it in the instruction's?

      The cake is wonderful, thank you! Your Keto Christmas Spice cake is next on my list. Any plans to develop a scone recipe using the keto flour? I haven’t been able to convert an existing recipe.
