One of my longtime weaknesses is fudge!
There was a shop in one of the touristy areas of San Diego that I used to battle the crowds just to buy their fudge.
OH.MY.GAWD.
Heaven!!
But, when I went low carb, I figured that would just be another thing on a long list of things that I would have to say bye-bye to.
Then I came upon a term that will forever be burned into my heart with love and joy.
FAT BOMB!
For the peeps that have been living la vida low carb, you know what a fat bomb is.
But, for newbies to the keto life, or just people that are curious, let me explain.
On the Keto Diet your body switches from burning insulin, which is produced in your body when you eat carbs, to burning fat.
One of the biggest mistakes I made when I first went Keto was to limit my carbs but not up my fat content.
That left me tired, cranky, and hungry ALL of the time.
Then I found the world of macro calculators and realized that I needed to get my rear in gear and get my fat intake to the proper levels.
Enter the fat bomb.
Fat bombs are gold when it comes to this.
You can have savory, or sweet, but they all help with that goal of getting your macros right and keeping your body the fat-burning machine it was meant to be!
I use a macadamia butter that I buy from Amazon. You can use any nut butter you want as long as it doesn't have added sugar. The carb count will change a bit, depending on what nut butter you choose, but it will still be good.

Also, if you like things on the chocolatier side, feel free to add more cocoa powder to suit your taste.

Keto Chocolate Nut Butter Fudge
Yield: 64 pieces
Prep time: 10 MCook time: Total time: 10 M
A super easy keto fudge recipe with the chocolate and nut flavors you crave. The perfect low carb treat all whipped up in just a few minutes!
Ingredients:
- 1 cup macadamia nut butter
- 1 cup butter, softened
- 8 ounces cream cheese, room temperature
- 2 cups Besti powdered sweetener
- 1/4 cup cocoa powder (can add 1/4 cup more for extra chocolate flavor)
- 1/2 teaspoon vanilla extract
Instructions:
- Place the first 3 ingredients in a microwave-safe bowl, and microwave 30 seconds, or until butter is melted.
- Whisk together until well combined.
- Add remaining ingredients and whisk until smooth.
- Pour into a parchment-lined 8x8 pan, and refrigerate until set, 2 to 4 hours.
- Cut into 64 one-inch pieces.
- Store in an airtight container in the refrigerator or freezer.
