I think I am losing my mind.
Or what little of it I have left!
I have become obsessed with all things BBQ and grilling lately.
Anything that you could possibly feed to hungry family and friends that hover around your grill, hang out on your deck, or crowd into your kitchen as they wait for some grilled or smoked yumminess.
Our Traeger has been working overtime!!
Just in the last week, we have made pulled pork, smoked pork steaks, ribs, chicken, burgers, and brats.
We also made smoked peaches.
Holy smoked deliciousness Batman!!
Since I went low carb last June, and then promptly broke my ankle in August, I really didn't get a chance to work on low carb versions, or alternatives, to my favorite BBQ and grilling noms.
I actually realized, as I was looking through my archives, that I never even posted my Blueberry BBQ Sauce so shame on me, and a low carb version of that will be on the blog ASAP.
I actually made them both this weekend.
I had the whole fam over to taste test, then had to make the tough decision as to which one I would post first.
It was a rough one.
I mean, the blueberry BBQ sauce on chicken?
OhhEmmmGeeee heaven!!
But, after smoking ribs 2 days in a row and using this sauce, I knew this had to be the first one up to bat.
Don't get me wrong, the blueberry is good on pork, and the strawberry is great on chicken, but when I couldn't stop eating these ribs while I was photographing them (which led to BBQ sauce everywhere), I knew it was the one y'all needed to see first!
It is uber easy to make.
The hardest part is just waiting for it to be done!
Once the strawberries start roasting in the oven your whole house will begin to smell insane!
Like, make you drool yummy!
Once the strawberries have done their thing in the oven, getting all roasty and sweet. You mix them with a few other ingredients.
Don't forget to scrape up every bit of that jammy juicy goodness!
And simmer away for 30 minutes.
Make sure to stir often to keep anything from getting too toasty on the pot bottom.
Once that has finished you are left with the most amazing sauce ever!
I could literally eat this sauce out of the jar with a spoon.
Which I may, or may not have done a few times.

ingredients:
- 2 pounds strawberries, hulled and sliced in half
- 1 cup sugar-free cup ketchup
- 1/2 cup brown sugar substitute
- 1/4 cup balsamic vinegar
- 2 tablespoons Lakanto sugar-free maple syrup
- 2 tablespoons sugar-free strawberry jam
- 2 tablespoons Worcestershire sauce
- 2 teaspoons Redmond's real salt
- 1 tablespoon dry mustard
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1/2 teaspoon cayenne pepper

How to cook Roasted Strawberry BBQ Sauce (Low Carb)
- Preheat oven to 400 degrees F.
- Place the strawberries in a single layer on a baking pan lined with foil folded up on the sides to capture the juices and roast until they start to caramelize, about 15-20 minutes. Remove from the oven and allow to cool a bit.
- In a medium pot combine the strawberries with the remaining ingredients. Bring to a boil, reduce to a simmer. Cook for 30 minutes, stirring frequently to prevent the sugars from burning.
- Brush BBQ sauce on your grilled meat during the last 5 minutes of cooking.
