That is heaven on a sheet pan, oh yes indeed!
I have to admit that I had to remake this recipe a few times before it even made it to the photo stage.
As soon as that pan came out of the oven we were grabbing squash cubes and those crunchy little chips that are Brussels sprouts gold!
Who knew that Brussels sprouts chips were a thing?
Move over Kale, sprouts are the new chip in town ?!
I had meant to have this posted waaaay before Thanksgiving but, life seemed to have different plans for it....and me.
First off, I caught the damn flu that is going around.
Now, let me explain something..
I HAD A FLU SHOT ?
Yup, for the first time in I don't know how many years, I got a flu shot. Kevin got one through work so I decided I should probably get one too.
2 weeks later?
I am laid up in bed, for almost 2 weeks, living on chicken soup, saltines, and Nyquil.
No fun!
Then, just when I was starting to feel human again and daring to venture out of the cozy cave of fluffy pillows and comfy blankets, I sign on to my computer and...
?
Nada.
Just the black screen of death ?
*facepalm*
Really universe? What did I do to piss you off?
Soooo that meant that I had to take advantage of Black Friday/Cyber Monday deals.
Oh darn ?
I was already planning on getting a new desktop after the first of the year, so this just meant a new laptop was in order. Which ended up being a new 17" Red HP with a speedy processor and tons of RAM and storage space.

I mean ummmm.......dang it.
But hey, it has been a long time since I bought myself a Christmas present and I have been a very good girl this year.
At least that is the story I am sticking to.
Anywho, back to the veggies.
Remember when I made these Italian Baked Zucchini and Tomatoes and swore that they were the best damn veggies I had ever made?
Wellllllll, they might be the second best now.
No, that's not entirely true. They are still my fave as a side for seafood but, when it comes to anything else, these roasted veggies are the bee's knees ?
Sheet Pan Roasted Vegetables
Yield: 10 (1 cup) servings

These Roasted Vegetables are the easiest, and tastiest vegetables you can make. I guarantee they will become a family favorite!
ingredients:
- 1 pound Brussels sprouts, halved
- 1 (1-pound) butternut squash, peeled, seeded, and cubed
- 1 pound sweet potato, peeled and cubed (low carb substitute 1 large head of cauliflower cut into florets)
- 1 large sprig fresh rosemary, leaves stripped and chopped
- Kosher salt
- Fresh cracked black pepper
- 3 tablespoons olive oil
- 1 cup pomegranate seeds
instructions:
How to cook Sheet Pan Roasted Vegetables
- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with tin foil.
- In a large bowl, toss Brussels sprouts, squash, potatoes, rosemary, salt, pepper, and olive oil. Spread evenly in a single layer on the baking sheet.
- Place the baking sheet in the oven and roast for 40 to 50 minutes, turning the vegetables once halfway through.
- Remove from the oven and sprinkle with the pomegranate seeds
NOTES:
Can buy pre-chopped veggies to save time. Net carbs per serving using cauliflower substitute is 7.79.
