Low Carb Taco Meatloaf

  • Preheat oven to 350 and line a baking sheet with tin foil.
  • In a large mixing bowl, combine ground beef, chiles, taco seasoning, salsa, egg, onion powder, and pork rinds.
  • Form a large loaf on the baking sheet.
  • Bake 45 minutes uncovered.
  • Top with the enchilada sauce and cheese.
  • Bake for an additional 15 minutes or until the meatloaf reaches an internal temperature of 160 degrees.
  • Allow the meatloaf to rest 10 minutes before slicing.
  • Top with chopped tomatoes, cilantro, and fresh jalapeños.
