Are you ready for some Low Carb Taco Meatloaf?
Raise your hand if you live for Taco Tuesday.
Tacos are my jam, well Mexican food period, but tacos make me a very happy girl.
Then I decided to change to a low-carb lifestyle.
Good news? I have lost about 30 pounds.
Bad news? NO TACOS!
Well, that was until I made Keto Flour Tortillas BUT I still love taco flavor in anything and everything, and sometimes I just don't feel like making tortillas.
Yes, even food bloggers get tired of cooking sometimes.
That is where this Low Carb Taco Meatloaf comes in.
Not a lot of prep, mix, form, bake, BOOM!
Y'all know I live with someone that is not exactly as quick to jump on the Mexican food bandwagon as me right?
Ya, the Mr. can pretty much take it or leave it.
Mostly leave it.
UNLESS it is my Keto Creamy Green Chile Chicken Enchiladas!
Then he is standing in the kitchen waiting to be fed like the pups do when I grab their food bowls.
I swear if he had a tail he would wag it!!
Then I made this Low Carb Taco Meatloaf and found another way to get him over to the dark side errrr Mexican food side.
The first time I made this he said it didn't have enough flavor.
I liked spice but he loves and I mean LOVES it!
So I used hot taco seasoning instead of my homemade Tex-Mex seasoning. Plus added a few extra fresh sliced jalapenos to his plate.
That was what he wanted and he downed 2 servings in no time flat!
So if you or your fam love spice, go HOT!
INGREDIENTS NEEDED TO MAKE LOW CARB TACO MEATLOAF
INGREDIENTS
- Hatch diced green chiles
- Mexican Seasoning Blend
- salsa verde
- egg
- onion powder
- ground spicy pork rinds
- enchilada sauce (homemade or store-bought)
- pink salt
- cracked black pepper
- shredded cheddar cheese
- fresh chopped tomatoes, green onions, cilantro, and jalapeños for garnish
Now, I know some of you might be thrown by the ground pork rinds in the recipe.
For people living a keto/low-carb lifestyle, pork rinds are a Godsend because they have zero carbs but have fat that we need because our bodies are adapted to running on fat, not insulin.
But, if you are not a keto peep, you can use breadcrumbs instead.
Nothing in my recipes is written in stone.
Like regular salsa more than salsa verde?
Go for it.
What is funny is that I hated pork rinds before I went keto.
I mean like realllllly hated them!
I still can't do regular pork rinds. But the spicy ones dipped in queso?
Heaven!!

KETO AND LOW CARB MEXICAN SIDE DISH RECIPES
Low Carb Taco Meatloaf
Ingredients
- 2 pounds ground beef
- 1 (4-ounce) can diced green chiles (hot or mild)
- 1/4 cup Mexican seasoning blend
- 1 cup salsa verde
- 1 egg
- 1 cup ground spicy pork rinds
- 1 cup red enchilada sauce
- pink salt
- cracked black pepper
- 4 ounces cheddar cheese shredded
- Fresh chopped tomatoes, green onions, cilantro, and jalapeños for garnish
Instructions
- Preheat oven to 350 and line a baking sheet with tin foil.
- In a large mixing bowl, combine ground beef, chiles, taco seasoning, salsa, egg, onion powder, and pork rinds.
- Form a large loaf on the baking sheet.
- Bake 45 minutes uncovered.
- Top with the enchilada sauce and cheese.
- Bake for an additional 15 minutes or until the meatloaf reaches an internal temperature of 160 degrees.
- Allow the meatloaf to rest 10 minutes before slicing.
- Top with chopped tomatoes, cilantro, and fresh jalapeños.
