So I am on a DIY kick lately.
Or as Mini Me used to say when she was a toddler, “I do it myself”!
But, beyond my inner 2-year-old standing with her hands on her hips declaring to the world that she can do it all, since I went low carb I really like to have control over what is in my sauces, and dressings, and spice blends.
You would be shocked to see some of the things that brands will sneak in there.
Also, when you make your own you can dial in the flavors to match what you enjoy.

Kevin loves spicy so I usually take the blends I come up with for y’all and bump up the heat level.
The last time we made my chimichurri (recipe coming soon) I ended up with my lips on fire because I bumped up the red chile flakes. I scooped up all of the sauce that had fallen off of the chicken breasts as they baked and slathered it all over them.
Woohoooo it was fire…… But in the most delicious way! We love to say “It hurts so good”.
Ya, we are a little weird in this house!
One of the things I have heard from many of you that are just starting the low carb or keto thing is that it is boring, or difficult because you just don’t know what to make.
I know when I first started I was doing the whole baked or pan-seared meat, with a salad or steamed veg. Maybe adding a cheese of some sort.
Yes, that night after night can be pretty yawn-inducing. So I have learned that rubs and marinades are my best friend.
As is meal prep. I used to HATE meal prep.
I am not a planner. I am a fly by the seat of my pants kinda girl. So whenever I have tried to meal prep/menu plan it has usually gone well for a little bit until it crashes and burns.
Now, I have to put some of the blame on the Mr for that because he calls me every night on his way home from work and will inevitably ask “What’s for dinner”.
Sometimes the answer is met with a positive response, other times?
*insert crickets chirping*
So, being the wonderful wife that I am, I would adjust the menu.
Now? Not so much.
But I am realizing that, now that I am making more of these homemade spice blends, and sauces, he is more excited about dinner too. That is a win in my book friends!!

- red chile powder
- ground roasted cumin powder
- ground roasted coriander powder
- black pepper
- pink salt
- garlic powder
- onion powder
- Mexican oregano
It works great with anything you want to cook from meat to veggies.
I have used it as a dry rub for BBQing, mixed it with chicken bone broth as a marinade, and added it to sauteed veggies or cauliflower rice to give them that Mexican flavor that I love.
If you have read the blog for any amount of time you know that Kevin has grumbled about my love of Mexican food. I could eat Mexican food 3 nights a week and be a happy camper.
Kevin? Not so much.
BUT I am slowly bringing him around.
The weirdness about that?
I am bringing him around with my keto/low carb recipes. MyCreamy Keto Green Chile Chicken Enchiladas and Mexican Cauliflower Rice are two of his newest faves and I never get a complaint when he knows that they are for dinner.
