I don't know about you, but I watch a TON of Food Network shows. If I am not watching something on Netflix with Kevin, it is pretty much on 24/7. I especially love the competition shows, with Chopped being right at the top of that list.
I like to think that I would be able to pull a dish together in a split second, but when they have things like chicken livers with black licorice?
Ummmm ya......I would be stumped!
That is why I am super excited Sargento asked me to be a part of the Chopped at Home Challenge again this year!
It gives this at-home cook a chance to do what I love, create great food with real ingredients.

- Pork tenderloin
- Broccoli
- Grape/Cherry tomatoes

Oh, and the theme is grilling.
WOW, this one kinda threw me for a hot second.
Pork tenderloin grilled? 
Broccoli and tomatoes on the grill? Ummmmm 
Cheese on the grill? 
But once I really put my thinking cap on, and kicked it into high gear, I knew exactly what I wanted to do.
I pounded out that tenderloin, smeared it with fresh homemade broccoli pesto, and stuffed if full of Sargento shredded cheese.
Did you know that Sargento cheese is available in 30 different varieties, blends and distinct cuts? And Sargento Shredded Cheese is always cut from blocks of 100% real, natural cheese. There is no "cheese food" going on here peeps!
I don't know about you, but real food is important to me. I want to know exactly what is going into mine, and my families, bodies!
Of course the G-baby could care less about all of that stuff, she just enjoyed cramming handfuls of the Sargento's Chef Blends 4 State Cheddar Cheese into her mouth.

In the end I had a total blast with this recipe!
I got to take out some frustrations on pork tenderloin with a meat mallet, stuff some pretty delicious things into it, and play on the grill.
The result was a mouthwatering, cheesy, melt in your mouth pork tenderloin, with some amazing smoky grill roasted cherry tomatoes on the side.

Broccoli Pesto and Cheese Stuffed Grilled Pork Tenderloin
Delicious, cheesy, broccoli pesto stuffed, melt in your mouth pork tenderloin, with amazing smoky grill roasted cherry tomatoes on the side.
prep time: 15 MINScook time: 30 MINStotal time: 45 mins
ingredients:
- 2 pints cherry tomatoes
- Olive oil
- 2 (1-pound) pork tenderloins, butterflied and pounded out to 1/4" thickness
- 2 cups broccoli pesto
- 2 cups Sargento's Chef Blends 4 State Cheddar Cheese
- Kosher salt
- Fresh cracked black pepper
- Kitchen twine cut into 12 (8-inch) pieces.
instructions
- Heat one side of your grill to medium heat and prep your the tomatoes to make the grill roasted tomatoes
- Lay 6 pieces of kitchen twine on a meat cutting board, place the pounded pork tenderloin on top, making sure the twine is spaced evenly along the tenderloin.
- Spread 1 cup of broccoli pesto onto the tenderloin, leaving an inch along one edge for rolling.
- Sprinkle 1 cup of Sargento's Chef Blends 4 State Cheddar Cheese on top of the pesto.
- Carefully roll the tenderloin toward the edge with no pesto, and tie securely with the twine. Trim excess twine. Repeat with second tenderloin.
- Place the tenderloins on the grill, and cook for 3 minutes, turn a quarter turn and cook another 3 minutes, repeat for remaining 2 sides.
- Remove the tenderloins from the grill, tent with foil, and allow to rest for 5 to 10 minutes.
