They say that you always want what you can't have, and boy is that true. It always seems that I crave the food I absolutely can not have, no matter how badly I want it.
I would kill for rolled tacos from the little taco shop that was down the street from me in San Diego (Lolita's in Chula Vista. Holla at my rolled taco lovin' peeps), a fish taco from Rubio's, an In-N-Out burger (OhhEmmGeee yesssssssssss), and chicken lettuce wraps from PF Changs.
Now, when it comes to the first three in that list, I am completely out of luck. Unless of course I want to drive 20+ hours.
Ummmm ya, not thinkin' that's gonna be happening any time soon.
But there is a PF Changs here in Washington. It is just that is it over an hour away. I hate driving in Seattle, and Kevin isn't a huge fan of their prices. So no lettuce wraps for me!
That is until now.
You know that I have been craving these dang things, and telling myself I was going to make them soon, for so long I really can't remember.
There is a place over in Tacoma called BJ's, and they have lettuce wraps on their menu. They will do in a pinch, but they aren't the ones I truly crave.
I am not sure why I am so hung up on PF Changs. I mean a lettuce wrap is a lettuce wrap yes?

Tell me that you have food that you crave no matter what other option is available. I will call it being loyal VS being obsessed. Loyal sounds so much more......sane.
It could possibly be due to the memories that were made there.
A friend of mine and I used to try to do lunch every couple of weeks or so when I lived in San Diego, and it seemed that 9 times out of 10 we would end up at PF Changs.
Those were always awesome girls' days out. Close to the Fashion Valley Mall, which they should just call Shopping Heaven and get it over with, and right next door to the Container Store, another of my long-time obsessions.
Oh don't even let me get on their website with a credit card!
Or because my kids and I spent many an awesome dinner there together.
Their father was military, so was gone quite often, and I used to plan "date nights" for us. We would get dressed up, and go to dinner and a movie. It was usually The Cheesecake Factory or PF Changs for those outings.
Good Lord, Cheesecake Factory, mmmmmm I haven't thought of that place in a long time.
Oops, ADD kicked in, Oh look at the kitty! *sigh* my brain can be a crazy place sometimes.
Now, where was I? Friend, kids, date night, lettuce wraps, ahh yes PF Changs!
Why in the heck it took me this long to do it is beyond me, because helloooooooooooo they are really reallllllllllly simple to make! Like Kevin could make them simple, no joke people. There is absolutely no reason why you can't do it. And trust me, you want to do it because they are ooohhh sooooo good!!

I like to use things like butter lettuce or bibb lettuce because they create a perfect little cup for the filling. But, if you are using a different kind of lettuce, or making a bigger chicken lettuce wrap, feel free to use parchment paper to wrap it and keep the filling securely inside. Just peel the parchment paper as you eat.

Copycat PF Chang's Chicken Lettuce Wraps (Keto & Gluten-Free)
Ingredients
- 1 tbsp coconut oil
- 1 lb ground chicken
- 3 cloves garlic minced
- 1 small white onion minced
- 1/4 cup gluten-free hoisin sauce (to lower the carbs you can use this keto hoisin sauce)
- 2 tbsp Low sodium Tamari (for soy-free you can use liquid aminos)
- 1 tbsp rice wine vinegar
- 1 tsp toasted sesame oil
- 1 tbsp ginger paste
- 2 tsp sriracha sauce plus more for servings
- 4 green onions thinly sliced
- pink salt
- cracked black pepper
- 1 head of butter lettuce
- toasted sesame seeds
Instructions
- Heat oil in a large skillet over medium-high heat. Add ground chicken and cook until well browned, about 5 minutes, making sure to break it up into small bits as it cooks.
- Push the meat to the edge of the pan and stir in garlic and onion and cook until onions have become translucent - about 3 to 5 minutes.
- Add the hoisin sauce, Tamari, sesame oil, rice wine vinegar, ginger, and Sriracha Stir in to combine well.
- Add the green onions and cook until tender, about 1-2 minutes; season with salt and pepper, to taste.
- Serve with your favorite dipping sauce.

Ooohhhh I am so jealous Christine! I used to live on Agua Tibia when we lived in Chula Vista. I can't believe there is a PF Changs there now! Well, at least I can make these wraps. I have never been able to duplicate my fave Lolitas food 🙁

I made this today! It was so good i do not think it needed dipping sauce. I also cooked it in nonstick skillet so it did not need oil to brown the meat.

I'm pretty sure that P.F. Chang's lettuce wraps have mushrooms in them. There's something black in their chicken mixture that has the texture of cooked mushrooms. But since I don't like mushrooms, I'm going to try your recipe! I hope it's good!

If you are getting hunfer pangs on the keto diet chances are you are not getting enough fat. Especially once you have been keto for over a week. Once you are in ketosis your body is running on fat and no longer running on insulin/sugar. Grab chicken thighs instead of chicken breasts and well marbled beef. You can also make fat bombs for a quick pick me up!
