I have been in such a good mood lately!
The weather has been amazeballs here in my little corner of Western Washington. With it being gray and rainy, 8+ months a year, it is time to throw a party when you have days on days of gorgeous sunshiny weather.
I just want to stay outside all day.
I have become that old lady person that sits on the front porch with a cup of coffee, or iced tea, and waves at all of the people that walk by and I live on the corner of a busy block since there is a park right next to our house. So I am a wavin' fool!
I have even gotten the neighborhood teenagers to wave!
Low-Carb Salmon BLTs with Creamy Lemon Dill Mayo
ingredients:
- 4 (4 to 6-ounce) salmon fillets
- Kosher salt
- Fresh cracked black pepper
- 1/2 cup Sir Kensington's Organic Mayo
- 1 tablespoon fresh dill, chopped
- Zest from 1 lemon
- 8 slices of keto bread
- 4 romaine lettuce leaves
- 2 medium tomatoes, sliced
- 8 slices bacon, cooked

How to cook Low-Carb Salmon BLTs with Creamy Lemon Dill Sauce
- Sprinkle the salmon fillets generously with salt and pepper.
- Coat the bottom of a large, heavy-bottomed pan with olive oil and place over medium-high heat. Once the oil is hot and the butter is melted, add the salmon fillets, skin side down. Cook, without moving until the sides are cooked just past halfway up the fillets. Flip and cook, without moving, until the sides are fully cooked, then remove from the heat for medium-rare
- Meanwhile, in a small mixing bowl, mix together the mayo, fresh dill, and lemon zest. Combine well and set aside.
- Toast the bread slices and spread lemon-dill mayo on 1 side of 4 of the toasted bread slices. Place 1 lettuce leaf, 2 tomato slices, 1 salmon fillet, 2 pieces of bacon on the other bread slices.
