Aaahhhh salmon season has officially opened here in Washington. I just spied the first Copper River salmon at the store the other day #BeStillMyHeart So this quick and easy Sheet Pan Salmon and Asparagus immediately popped into my head.
It is funny. When I first moved here from San Diego I was not a salmon fan. Actually, I wasn't much of a fish eater at all. Oh, I had my occasional tilapia, but the couple of times I tried salmon left me seriously wondering what all of the hubbub was about. I just wasn't feelin' it.
But over the course of the time that I have lived here, salmon has become an obsession with me. I seriously get all giddy inside when I start seeing those gorgeous fresh-caught fillets gracing the window of the butcher shop.

So, with salmon on the brain, I decided to bust out one of my new fave ways to cook....sheet pan baby! I do so love a one-pan plan. Less fuss, less muss, less cleanup, YES!
The hardest part of this recipe?
Pulling pin bones, if there are any.
I have a special set of pliers just for that purpose. I love it when people go into my silverware drawer, and ask Ummm why do you have tools in your kitchen drawer?.
In case I need to fix the plumbing while I am cooking!

INGREDIENTS NEEDED TO MAKE SHEET PAN SALMON AND ASPARAGUS

INGREDIENTS
- Lemon zest and juice
- Greek yogurt
- Dijon mustard
- Fresh dill
- Pink salt
- Cracked black pepper
- Salmon
- Asparagus
- Garlic
- Olive oil
HOW TO MAKE SHEET PAN SALMON AND ASPARAGUS
- Preheat the oven to 450 degrees F.
- Spread the lemon slices out on the pan.
- In a small bowl, mix the lemon juice and zest, Greek yogurt, and Dijon mustard together. Season with salt and pepper and 1 the fresh dill.
- Place the salmon on the sheet pan and season with salt and pepper. Spread sauce on evenly.
- In a large bowl, toss the asparagus and garlic with olive oil, and season with salt and pepper. Scatter the on the baking sheet. Season with more salt and pepper if desired.
- Bake for 15-20 minutes or until the desired doneness.
- Remove from the oven and sprinkle with fresh dill and more lemon if you like.

Can I use a different vegetable in place of the asparagus in this recipe?
Yes, you can use whatever low carb veggie your heart desires. I have used broccoli, zucchini, bell peppers, tomatoes, etc. The cooking time might vary depending on the veggie you chose so adjust your cooking accordingly.
How should I store the leftover salmon and asparagus?
I store the leftovers in an airtight container in my fridge for up to 3 days. Gently reheat the leftovers in a 350-degree oven just until warmed through.

It is amazing how they do that. Remind me to check for hidden cameras!
So this whole pan disappeared EXTREMELY fast. I had to remind people to slow down enough to taste the food!!
All joking aside, this has got to be one of my fave recipes for salmon. Quick and easy, and oohh sooooo good!
And if I have leftovers I make a nice salmon spread for sandwiches the next day YUM!!
