    How are you, my fine foodie friends?
     
    Many of Y'all know that I am nursing a broken foot/ankle and have been since the beginning of August.
     
    Can I just tell you that days upon days of laying in bed is enough to make this girl cray cray!
     
    Like "They're coming to take you away" cray?
     
    If I was doing anything for Halloween a straight jacket would be the perfect costume!
     
    Cross your fingers for me that by the middle of next month, the doc will tell me that I can at least walk in the boot with crutches.
     
    One thing that really makes me nutso is that I can't cook the way I want to. 
     
    I am always jotting down recipe ideas and right now I have a novel full because I haven't been able to test any of them.
     
    I love to cook, it is my hobby, my passion, and the way that I can lift myself up when I am in a funk.
     
    But right now that just really isn't an option, unless it is an easy recipe like this one.
     
    I love hash browns with my breakfast but, since going keto, they are a big no-no for me. 
     
    Kevin can have all of the baked potatoes, hash browns, and tater tots he wants, while I am over here pouting.
     
    Then I discovered that cauliflower was an awesome substitute for potato in many recipes like Lemon Garlic Mashed Cauliflower "Potatoes", Loaded Cauliflower Casserole. and this Mediterranean Cauliflower Salad, and my heart fluttered. 
     
    I have to admit, cauliflower was not on my "Fave" list when I was growing up. You know it smells kinda funkalicious when it cooks and, as a kid, that kinda threw me off.
     
    But since growing up, cauliflower ended up back on my radar and I learned to embrace it as one of my favorite veggies.

    • Parmesan cheese
    • pork rinds
    • garlic powder
    • onion powder

    HOW TO MAKE CHEESY LOW CARB CAULIFLOWER HASH BROWNS

    Please see the recipe card below for the complete recipe, including measurements and cooking time!
     
    STEP 1
     
    Preheat oven to 400 degrees
     
    STEP 2

    Cook riced cauliflower per package instructions and let cool.
     
    STEP 3

    Place in a clean dish towel or cheesecloth and ring out any excess water.
     
    STEP 4

    Place cauliflower in a bowl, add the rest of the ingredients and combine well.
     
    STEP 5

    Form into six hash brown squares (approx 1/3 packed cup of mix) on a parchment-lined baking sheet.
     
    STEP 6

    Bake for 15-20 minutes.

    FAQS ABOUT CHEESY LOW CARB CAULIFLOWER HASH BROWNS

    Can these Cheesy Low Carb Cauliflower Hash Browns be made ahead of time?

    Yes, I have made these the night before and kept them in the fridge overnight. Make sure to place them separated on a baking sheet or if you need to stack them, separate them with a piece of parchment paper in between.

    Can I make these hash browns and freeze them?

    Yes, I would suggest freezing them before baking. Place them flat on a parchment-lined baking sheet in the freezer. Once they are frozen you can place them in a freezer bag. Bake from frozen. You will need to add a bit more time to the baking process. All ovens are different so I can't give an exact amount of time so keep an eye on them.

    How should I store the leftover Cheesy Low Carb Cauliflower Hash Browns?

    Store any leftovers in an airtight container in the refrigerator for up to 5 days.

    This recipe has been one of my faves since its inception, and I didn't think it could get any better.
     
    Enter Birds Eye Steamfresh Savory Herb Riced Cauliflower.
     
    With Kevin having to do most of the cooking around here, I have been putting things on the list that will make his life easier. Birds Eye Steamfresh Savory Herb Riced Cauliflower was at the top of that list. I love Birds Eye, it is a brand that I have grown up on and trust to always know products will be perfect every time I cook with them.
     
    Feel a little "iffy" about frozen veggies? 
     
    Let me help you feel better about them. 
     
    During the flash freezing process, vegetables are frozen instantly. Their cell walls are not damaged, so the frozen veggies are nearly identical to fresh in nutrition and taste. 
     
    The flavor, texture, and color are all preserved. 
     
    We have been using Birds Eye frozen cauliflower, broccoli,  Brussel sprouts, green beans, and I could go on and on. 
     
    Did you know that you can roast frozen veggies just like you would fresh?
     
    Yup!
     
    That little nugget of info will change up your holiday meal plan big time!
     
    So, back to the hash browns.
     
    Sorry, my mind wanders a bit.
     
    I used to take the frozen cauliflower florets, cook them, then chop them. Until the light bulb turned on?
     
    Duh, Bobbi, you have been eating the heck out of the frozen riced cauliflower, why have you not thought about using it in your hash brown recipe?
     
    Geez, sometimes I am a little slow.
     
    But I do get there because I immediately called the Mr. and asked him to pick up some of the Birds Eye frozen riced cauliflower on his way home. I had a plan for a nice big breakfast of eggs, sausage, and these cauliflower hash browns. 
     
    The perfect low-carb, keto breakfast I might add.
     
    Color me SO happy when he called me from the store and told me that he not only found the original frozen riced cauliflower, but he also found Italian cheese, roasted garlic, and savory herb versions.
     
    I immediately told him to grab several bags of each one!
     
    I knew I wanted to use the savory herb one in this recipe because I normally put herbs in the mix. It was awesome to let Birds Eye do the work for me. 
     
    With no herb chopping and no veggie chopping, this recipe was a breeze for me to make, even on one good foot.
     
    I will admit that Kevin had to put them in and take them out of the oven, just because he wanted to make sure that I didn't drop them and ruin his breakfast.
     
    What a nice guy right? 
     
    So, please, head on down to the store and pick up a few bags of the Birds Eye frozen riced cauliflower and, if you are anything like me, buy several of each flavor because you never know when you are going to have a craving.
     
    I may, or may not have eaten an entire bag for lunch the other day.

    Instructions

      Aaaww thanks! This post was written last October so I have been on the mend for a while now. Still have swelling and pain since they had to use quite a bit of hardware to put me back together, but am much better than I was 🙂
