I am sure that almost everyone will assume that the answer is a big NO right? You would think so. And, if you are talking about the traditional store-bought peanut butter and jelly that we all grew up with, you would be correct.
Traditional peanut butter packs about 5 net carbs per (2 tablespoons) serving and regular store-bought jelly can contain up to 19 grams of carbs per tablespoon!
When you take into consideration that people that are strict keto only consume 20, or fewer, carbs per day, a tablespoon of peanut butter and a tablespoon of jelly would put them over their entire daily allowance of carbs!
Even for someone like myself, who is more low-carb than strict keto, our daily allowance is anywhere from 50 to 75 carbs and I am not going to give up almost half of that for a mouthful of my childhood fave!
But, if you go with homemade or store-bought with no added sugar you can cut the number of carbs in peanut butter by about half. My Homemade Peanut Butter has less than 3 net carbs per serving.
So, when you are talking store-bought peanut butter and jelly the answer to the question is a huge NO. But, if you make your own you can still enjoy your childhood favorite. And that makes me a very very happy girl!
INGREDIENTS NEEDED TO MAKE KETO PEANUT BUTTER AND JELLY MUFFINS

Preheat the oven to 350 degrees F and line a muffin tin with muffin liners.
STEP 2 Beat the eggs in a stand mixer (or with a hand mixer).
STEP 3 Add the melted butter, peanut butter, vanilla, apple cider vinegar, and unsweetened coconut milk to the eggs and blend well.
STEP 4 In a large bowl, sift the almond flour, coconut flour, salt, and powdered sweetener. Add baking powder, xanthan gum, and salt to the dry ingredients and mix in well.
STEP 5 Fold wet ingredients into dry and mix until just combined. Do NOT overmix.
STEP 6 Fill muffin liners 3/4 of the way full. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow muffins to cool completely before removing them from the muffin tin.
To make the frosting
Place all of the ingredients in a large bowl.
STEP 2 Use a stand or hand mixer to completely blend everything together evenly.
To assemble the muffins
Using a small melon baller, or spoon, scoop out the center of each muffin.
STEP 2 Spoon 1 tablespoon of the jam into the muffins.
STEP 3 Pipe or spread the frosting onto the muffins and top with crushed peanuts.

Can I use different nut butter instead of peanut butter in the Keto Peanut Butter and Jelly Muffins?
I have only made these with peanut butter but I am sure another smooth/creamy nut butter would work well in its place. My other favorite nut butter is macadamia so I bet that would be good.
Can I use a different jam for these Keto Peanut Butter and Jelly Muffins?
Yes, if you aren’t a fan of mixed berry jam you could make another type, or you can buy a sugar-free jam you like. Just note that the nutritional info is for the ingredients listed so it would change a bit.
How should I store the leftover Keto Peanut Butter and Jelly Muffins?
You can store them in an airtight container on the counter for up to 3 days, or in the refrigerator for about a week. Just note that they have a better texture and flavor at room temperature so I would take muffins out of the fridge the day before you want to eat them.
If you would like to freeze them place them on a baking sheet in the freezer. Once frozen you can place them into an airtight container or bag. Store for up to 3 months. Remember to take them out of the freezer the day before you want to enjoy them.

As soon as I made the homemade peanut butter I knew I needed to make some jam/jelly and these needed to happen. I used to make a version of these before I went low carb and they were one of my favorite muffins. Plus the Mr is a huge PB&J lover so I wanted to get his opinion as well.
