    Aaahhh summer is almost upon us my friends!!

    Yes! Summer is so amazing here in Western Washington!

    We deal with months and months of "liquid sunshine" so when the actual summer arrives it is

    Lemon to me is the flavor of summer.

    Oh, don't get me wrong, I have been known to make this in the dead of winter, but who could blame me?

    It is like sunshine in a jar! And it couldn't be any easier!!

    Bonus is that this is a low-carb recipe version people!

    No guilt.

    I had been wanting to try my hand at making homemade curd when I came up with this recipe, but just worried that I would mess it up. 
    Usually when something requires me to stand and stir for an extended period of time something inevitably goes wrong. 
    My ADD gets in the way and I am stirring, stirring, stirring......Oh, look at the squirrel! 
    Then I am off doing something else and 
    WHOOPS.....THE CURD!!

    But that was not an issue with this technique. 
    It was UBER simple, and pretty much foolproof. 
    Well, it is foolproof as long as you make sure to put everything in a big enough bowl!
    The first time I made this I used a bowl that did not leave room for the curd to boil up, which it will do, so I had lemon soup all over the inside of my microwave.
     
    Not fun!

    Now that I have the process down? 
    Oh, I have been making jars, and jars, and JARS of it!! I am not joking! 
    I put this on low-carb french toast (or even plain toast), pancakes, crepes, muffins.......or just eat it by the spoonful. 
    It.is.SO.good!!

    Quick Low-Carb Microwave Lemon Curd

    Make a batch of this luscious creamy low-carb lemon curd recipe in a fraction of the time, and with less muss and fuss, just by using your microwave so you can jazz up your keto pancakes, crepes, muffins, and more!
    prep time: 5 Mcook time: 5 Mtotal time: 10 M

    ingredients:

    • 1/2 cup unsalted grass-fed butter
    • 1 cup Besti Monk Fruit and Allulose Blend sweetener
    • 3 eggs + 1 egg yolk
    • 1 cup fresh squeezed lemon juice

    instructions:

    How to cook Quick Low-Carb Microwave Lemon Curd

    1. Melt the butter in a large microwave-safe bowl in the microwave for around 1 minute to 1 minute 30 seconds, or until fully melted.
    2. Whisk in the sweetener, and lemon juice, and whisk until smooth, then whisk in the eggs.
    3. Cook in the microwave on high in one-minute increments, whisking well after each minute until the mixture thickens enough that it coats the back of a spoon. The time may vary depending on your microwave's power.
    4. Once thickened, transfer into an airtight container or jar, pressing plastic wrap onto the curd to prevent a skin from forming. Refrigerate for at least 2 hours until set.
    5. Store in the refrigerator for up to 4 weeks, or in the freezer for up to a year.

      Just wondering if could press wax paper on it while cooling for two hours instead of plastic wrap that prevents the skin from forming. I am hesitant to have plastic wrap touching warm food ?

          Yes, if you are not low carb you can use regular sugar in this recipe.

      I let the curd cool just a bit before I pressed the plastic wrap into it. I am sure the wax paper would be OK, I am just not sure if you could get it to press against the entire top of the curd flatly.

      Yes you can do a 1/1 swap with sugar for erythritol.

      As I only use unsalted butter I cannot speak to this. I am not sure if it would make the curd taste salty or not. If you do try will you come back and let me know?
