    Asparagus is, hands down, my favorite green veggie! 
     
    Don't get me wrong, 
     
    I loves me some broccoli and Brussels sprouts, but asparagus just makes my teeter totter! 
     
    When springtime rolls around and those tiny little tender spears of yumminess hit the stores....
     
    OhhhEmmmmGeeeee! 
     
    I will buy 3 or 4 pounds at a time. Kevin thinks I am completely nuts. 

    I have made it so many different ways. There is Asparagus with Bacon Sabayone, Creamy Asparagus Soup, Grilled Asparagus with Garlic and Balsamic Glaze, Asparagus Wrapped in Prosciutto with Beurre Blanc, Beef and Asparagus Curry, Rosemary and Lemon Chicken Thighs with Asparagus, and don't forget brunch with Baked Asparagus and Eggs!

    I will seriously eat it steamed, grilled, roasted, raw, you name it, just give it to me!!

    But I do have to admit that roasting asparagus is one of my favorite ways to prepare it. It gives it such a fabulous flavor.

    Then you go over the top by adding some garlic and Parmesan. Boy howdy! That is one fabulous side dish. Or in my case the main dish because I refuse to share!

    Seriously, I have to make a double batch if Kevin is going to eat one single spear. I am just greedy like that I guess.

    But hey, I am the chef right......it definitely has its perks.

     
    My love has actually rubbed off on Kevin a bit this year. Several times he came back from the store with asparagus, even though it wasn't on the list. 
     
    Aaawwww what a great guy right? 
     
    Who needs flowers when your guy brings you home a bunch of asparaguses? 
     
    I did actually put the first bunch he brought me into a small vase of water and sat it on the kitchen counter. 
     
    He thought I was being a smart a....eerrrr smarty pants, but I assured him I thought it was so sweet that he thought of what I would really enjoy. 
     
    I mean I love roses just as much as the next girl, and don't get me wrong I want flowers every once in a while. 
     
    But you can't eat roses with your steak!!

    Roasted Asparagus with Garlic and Parmesan

    Roasting asparagus brings out its natural sweetness and, paired with the savory garlic and salty parmesan makes this the perfect side dish for fish, chicken, and so much more!
    prep time: 10 MINScook time: 15 MINStotal time: 25 mins

    ingredients:

    • 1 pound asparagus
    • 4 cloves garlic, chopped
    • 2 tablespoons extra virgin olive oil
    • Kosher salt
    • Fresh cracked black pepper
    • 1/2 cup grated Parmesan cheese, or to taste

    instructions

    1. Preheat oven to 400 degrees F.
    2. Break or cut off the woody ends of the asparagus spears.
    3. In a large bowl, add the olive oil, garlic, salt, pepper, and asparagus. Toss to coat.
    4. Spread the asparagus spears on a large baking sheet and sprinkle with the Parmesan cheese.F.
    5. Bake 15 to 20 minutes, or until the spears begin to brown, turning once.

      I've used this recipe before and...I'm a fan! Wondering if I will ruin the texture if I transfer the roasted asparagus to my crock pot and set it on warm for a few hours.

      I amd so happy you enjoy the recipe! As far as the crock pot, I personally wouldn't. I am thinking it would end up a bit mushy. But I am not absolutely positive.
