This sugar-free Keto Slow Cooker Dulce de Leche recipe is so ridiculously simple but soooooo amazingly good! Don't blame me if you want to eat the whole jar!!

Have you gotten to the point that candy, cookies, and fudge are now their own food group?
I have realized that the reason I rarely eat sweets throughout the year is that I eat a butt-ton of them in December!!
I would be hard-pressed to think of a day in the last couple of weeks that I have not consumed some form of holiday treataliciousness.
I keep telling myself that it doesn't really count because I never eat a full serving, just a nibble to taste test here and there.
However, when you are making 6 different sweet treats in one day.......ya those nibbles add up fast!!
I have been avoiding my bathroom scale (I used to weigh every morning) so much that it left me a note that said:
    "Was it something I said?"!
No no my dear scale, it was something(s) I devoured ate!
So I made a promise to myself to be more careful about how many sugary treats I was cramming into my face.
Untilllllllllllllllll I made this Dulce de Leche.
    OOhhEMmmmGeeee gang!
I am pretty sure that when you arrive at the pearly gates you get your wings, a harp, and a jar of this Dulce de Leche!
See that spoonful in the photo below (go ahead and look, I will wait)?
Ya, that went straight into my face as soon as the photos were taken and I am not ashamed to admit it.
Kevin heard me mmmming all the way downstairs!
He, of course, had to come into my studio (OK so it is my spare room set up with photo equipment but it makes me feel important to call it a studio so work with me here) to see what the ruckus was all about, and found me lovingly licking every last remnant of the dulce de leche off of that spoon.
He didn't believe that it was as good as I said it was until I shoved a spoonful in his mouth.
    That changed his tune!
I had originally made these as Christmas gifts.
I needed 3 jars for the baskets I am making, and 1 jar to use for the presentation.
Well ummm that kind of went by the wayside after we tasted it.
We have been adding dulce de leche to just about everything!
Stir a spoonful into your hot coffee or oatmeal, heat it up and drizzle it over ice cream or cookies, add it to your cheesecake batter.
    Aahhhh heaven!
This stuff would make and old shoe taste good I swear!
Now I am busy trying to make a million and one recipes to use it in. Lord only knows how many batches I will go through, and I am not going to tell either!

Yes, you put the lids on the jars. Sorry that wasn't clear. I fixed the recipe to reflect that.

This sounds wonderful but I do not have a crock pot large enough for jars! there are only two of us. Is there another method for cooking this yummy sauce? (On ice cream, ummmm!)

Hi Marie, you could do two jars at a time if you have a 3 quart slow cooker (usually the size of the smaller ones). Other than that, I haven't made it any other way. So sorry I couldn't help more than that.

Does the dulce-de-leche need to be refrigerated right away... or can it be stored at room temperature until it is opened?

I will say that it can be stored at room temperature until opened and then it should be refrigerated. Many will say that no dairy is safely stored at roo temperature, but I am a rebel canner and can using European (and Amish) guidelines so I can and store dairy all of the time. As long as the lids are seeled (try opening them with your fingers) it is seeled and can be stored at room temp. I also store all of my home canned items without the rings so if something does develope the lid will pop off.
