SALMON! ??
Easy to make salmon recipes are a staple in our house. Recipes like Sheet Pan Pesto Salmon, Sheet Pan Salmon and Asparagus, and Low-Carb Salmon BLTs with Creamy Lemon Dill Mayo, just to name a few.
Seafood, but especially salmon, is a favorite of everyone in my family, kids, and adults alike.
When the Mr. isn't fortunate enough to catch a salmon when he goes fishing, our favorite choice is Open Nature® from Albertsons for many reasons.
It is wild-caught.
Contains no preservatives.
Carries the Responsible Choice logo.
I shopped at Albertsons, but you can also find Open Nature at the Albertsons Companies family of stores, including Albertsons, Safeway, ACME Markets, Jewel-Osco, Vons, Randalls, Shaw’s Supermarket, Star Market, Tom Thumb, and Vons.
Albertsons also offers Grocery Delivery and Drive Up & Go™ for convenient ways to shop!
Why do I prefer wild-caught seafood vs farm-raised?
Wild fish have a more varied diet than their farm-raised cousins. which gives them a much better flavor.
Because wild fish are constantly on the move and actively foraging for food, their meat is leaner than farm-raised fish.
As a result, their meat is less fatty, and healthier too.
Now, add to this that Open Nature seafood contains no preservatives and you can see why it is a brand I truly enjoy.
What does the Responsible Choice logo mean?
Albertsons Responsible Choice logo is a clear and trustworthy indicator to consumers that the Open Nature brand products have been raised, or caught, in ways that help safeguard future supplies, which helps to keep our oceans ecosystems alive and thriving.
This logo also signals that their sourcing is audited by a third party to ensure the highest standards.
I also love that the fish comes in perfect portions.
I don't know about you, but I hate wrestling with a whole side of a fish, trying to cook it or cut it up into individual servings. I always seem to end up with that one little wacky piece that is smaller than all of the other ones.
I like things quick and easy!
So it is perfect if you are planning a BBQ or just looking for an easy weeknight dinner!
Both of which I love.
So, let me show you exactly how easy this recipe is to make.
I mean like ridiculously easy, and we all know ridiculous can be my middle name!
Just grab your asparagus and bend one. Where it snaps will show you the "woody" end.
Then, using a good sharp knife chop those ends off.
Side note, I save those ends in the freezer to make veggie stock later, or give a few to my dogs, they love asparagus!
I was making four servings so I portioned the asparagus out into 4 bundles.
Place a bundle in the center of a square of foil, then top that with a salmon filet.
I don't remove the skin because once cooked, the salmon comes off of the skin super easily, but you can always remove the skin if you prefer it that way.
Then spread 1/4th of the butter mixture across the salmon.
Make sure to pat the fish dry with a paper towel to make it easier to spread.
I also spoon a little bit of the lemon juice that doesn't mix easily into the butter.
Then season it with salt and pepper.
Carefully fold the sides of the foil up around the salmon and asparagus and crimp the edges together.
I make sure to leave the center seam standing up, not flat to the package, so I have a nice little "handle" to grab with the tongs.
It is also easier to open easily to peek and see if the fish is done.
If you don't have a grill, or would rather cook inside, this recipe can easily be baked in the oven too!
